Growing up, I loved virgin Pina Coladas. I remember going to Red Lobster with parents and my dad ordered a Pina Colada for himself, but his contained alcohol. It looked so good and I so wanted to taste it. When the waiter came back over, my dad asked if they could make me a non-alcoholic version. They did and right than and there an addiction was born!! Of course, once I was an adult I was able to try the alcoholic version and believe me I drank quite a few on my honeymoon, well it was in the Bahamas, in paradis, so when in Rome do as the Romans do, right?

When we got home from our honeymoon, it was still summertime and I was still craving Pina Coladas, but did not want to consume large quantities of alcohol all day long, all summer long. Lo and behold, one of our relatives gave us a smoothie maker for my bridal shower and decided to try to find the right recipe (fairly simple) and the right ingredients (fairly inexpensive, if possible) to make a Pina Colada smoothie without alcohol of course.

So this recipe was born about 6 years after, when my husband and I were first newlyweds. We still love this one and so now do my young kids. It has fruit and ice cream, so what little kid wouldn't like it. Plus, it fairly simple/easy and inexpensive to make. I have said this before, but with children and living on a budget both are truly a blessing.

Cook Time

Prep time: 10 min
Ready in: 10 min
Yields: 3-5 servings

Ingredients

  • 5 Tbs. Coconut Milk, I use Goya
  • 2 1/2 Cups Pineapple Juice, Dole is what I use.
  • 1/2 Cup Vanilla Ice Cream, We prefer Breyers or Friendly's
  • 1 1/2 Cups Frozen Pineapple Chunks, Again, I use Dole.

Instructions

  1. Pour all liquid ingredients into the smoothie maker.
  2. Add all frozen ingredients too.
  3. Blend at Low/Dispense setting for 30 seconds, then blend at High setting until smooth.
  4. While the machine is running, move the stir stick around counterclockwise to aid mixing.
  5. Serve immediately in glasses. I use chilled glasses from the freezer whenever possible.

      Pina Coladas are one of my favorite drinks. If I think about it, it might be my favorite. I love anything pina colada flavored :) I will try this later today. Great idea for summer.

      Nmdonders, same here as I mentioned, Pina Colada is truly one of my favorites. I think the mixture of pineapple and coconut are what do it for. So glad you are going to try this and hope you too enjoy.

Never was a huge drinker though, but now I am lucky if I drink one alcoholic drink in a blue moon, so it is nice to be able to make a refreshing drink for the summertime without alcohol.

      I have had exactly the same experience with Pina Colada with my uncle when I was a child! He let me try his drink though and as far as I remember I didn't feel any alcohol taste.. It was just delicious and strange to me at the same time..

      Janine - Try using a little "Creme' de Coco" in it if you can find it. Also, you might try blending 1/4 much orange juice into the pineapple juice. Give it a little bit of kick. (something I learned from a bartender in San Juan). Of course, Barcardi's is a necessity for the adult version. Remember, it's the official rum of the Devil's Triangle! lol Great Job!

      Richard, I have tried "Creme de Coco" too in a pinch and agree it works wonders. I am not a huge orange juice fan, but Kevin is and probably would enjoy that. Very true also about Bacardi's and I am also partial to Malibu rum when in doubt. Thank you and glad to share with you :)
