Kids Love Tex Mex Mac And Cheese Anytime
One thing is for sure, kids love Taco's and they love Mac & Cheese. Put the two together and you have one heak of a kid pleasing meal! This recipe has been tested on my grandkids, and they had voted it as one of my better kid friendly meals! Shelly is my soon to be 13 year old, and she takes after me when it comes to spicy food. Shelly puts hot sauce on everything. Makayla on the other hand can be more of a bland type of food person, she takes after her mom.. Makayla did like this recipe, because she loves both Taco's and Mac & Cheese. So yes we have a winner here folks! This recipe is not something set in stone. You will need to adjust the amount of ingredients according to how many people you will serve. now onto the recipe. Oh and I almost forgot adults like it to.
** 1lb.of Hamburger
** 1 Onion chopped
** 1/2 Green Bell pepper chopped
** 1 package of Taco Seasoning Mix
** 1/2 pound of Elbow Macaroni
** Velveeta cheese , Sharp cheese and Monterey Jack with Jalapenpo cheese.
** Half & Half
** Black Pepper to taste
*** Stewed Tomatoes or ( frozen or canned corn for people who don't care for tomatoes).
Now assemble all the ingredients that you need as it saves time to do this. Chop the onion and green bell pepper. Saute the two until a tad soft, then add the hamburger meat with some of the Taco seasoning to start with, then stir. I add it to the raw meat to incorporate the flavor of the Taco seasoning. After stirring and cooking the meat, add more Taco seasoning, repeat until the packet is used up. Simmer the meat mixture. This will get all the flavor of the taco seasoning into the meat.
In the meantime make the cheese sauce the way the way you would normally make it, while that is going, start the water to boil for the macaroni. Cook the macaroni till a soft al dente. Drain and toss with the butter, then add the cheese sauce, and add the Taco meat, stir. You can heat up the stewed tomatoes at this point in the microwave ( might as well keep it simple). That's what I do. There you have it! A kid friendly meal ! I would serve this with either Cornbread or Nacho chips, also kid friendly food. The kids will gobble this dish up. Ha ha, I have to say though I have a friend of mine who ate this meal, and she though Salsa was good on top. So anything goes!
I would also like to say there are shortcut ways to making this if you are in a hurry. First off any leftover Taco meat from "Taco night", can be frozen, ( be sure to label and date it), and yes you can use boxed Mac & cheese in a pinch. Try to jazz it up a bit though with some real cheese, as the added touch will make all the difference, and give it more flavor . However you choose to make this meal, just sit down and enjoy my version of a good comfort meal! Thanks for reading, and I hope you like my recipe.
