Krusteaz Gluten-Free Chocolate Chip Cookies

I cannot take credit for this recipe as it was provided by the back of a bag of Krusteaz Gluten-Free All Purpose Flour that I got at Sam's Club for a decent price! I've wanted to try an alternative route to regular flour because we have a friend who is gluten intolerant and I feel bad that I make delicious food and treats that could potentially make him ill. These are the ingredients found in Krusteaz Gluten-Free All Purpose Flour: whole grain sorghum flour, brown rice flour (rice flour, rice bran), whole grain millet flour, rice flour, food starch-modified (tapioca), whole grain quinoa flour, xanthan gum. Nothing that can harm a person who is gluten intolerant! And you can replace one cup of wheat flour with one cup of the Gluten-Free All Purpose Flour so it is a fair trade with making any of your dishes!

Ingredients

  • 1/4 Cup Butter, Softened
  • 1/4 Cup Shortening
  • 1/2 Cup Sugar
  • 1/4 Cup Packed Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 1 Egg
  • 1 1/4 Cups Krusteaz Gluten-Free All Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 Cup Chocolate Chips
  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine butter, shortening, sugar, brown sugar, and vanilla extract until creamy. Stir in the egg Krusteaz Gluten-Free All Purpose Flour, baking soda, and salt and stir until well combined. Fold in the chocolate chips and drop by tablespoon onto an ungreased cookie sheet. Bake 14-16 minutes or until a light golden brown.
  3. Allow to cool before serving!

Again, this is not my recipe. I found it on the back of the Krusteaz bag and I really wanted to make a gluten-free cookie option and this one actually turned out pretty good. And I am sure you can replace the Krusteaz with coconut flour or almond flour, whatever you wish to make cookies, I just do not know the ratio of which you would replace the flour with. I'm not sure what my gluten intolerant friend think, but I will find out on Sunday and let everyone know in an update!

      I, too, have a friend that has gluten intolerance. She is also dairy intolerant. Could I use "coconut butter" instead of regular butter when baking gluten free chocolate chip cookies?
