Introduction

A day without coffee is waste for most of the people. Coffee, the caffeine in it makes us active for hours. In modern world, there are various recipes are generating random and fast. Likewise, coffee recipes are also generated and some of the coffee recipes are originated from the traditional days. But now those traditional coffee recipes become popular now-a-days. In this scenario, I like to share about "Kumbakonam Degree Coffee" which was originated before 100 years in a town named "Kumbakonam" located in west part of Tamil Nadu, south Indian state. I will explain the history, popularity and making of Kumbakonam Degree Coffee through this hub

Coffee in India

India was the land of cash crops. After the advent of British in India in 1800s, India faces tremendous changes in food habits like tea, coffee, usage of tobacco, etc. Coffee beans plantations are mostly located in western and Eastern Ghats of India covering the states of Kerala, Karnataka and Tamil Nadu. About Kumbakonam

Kumbakonam, a town in south east of Tamil Nadu, located in Thanjavur or Tanjore district. Kumbakonam and its surroundings are pilgrim locations for Hindus as it has many hindu temples. For every twelve years, there is a huge gathering of Hindus at mahamagam lake to take holy bath. People in and around Kumbakonam are mostly vegetarians in their food habits. Yes, degree here denotes the originality of Cow's fresh milk that is Milk without any artificial milk powder or without mixing up the water in it. The degree of the Milk is measured by Lactometer. The higher the degree, the originality of the milk is confirmed. So, now you got the ideas that this coffee is made with original unwatered Cow's fresh milk. Today, you can see various blue banners on sides of Indian highways especially in Tamil Nadu showing the sign of Kumbakonam degree coffee, but only some of them prepare original degree coffee and other are fakes. Also, in Tamil Nadu various franchisee businesses were started based on this name of Kumbakonam Degree Coffee.

Preparing Kumbakonam Degree Coffee

Kumbakonam Degree Coffee was prepared in large volume by large water boilers made up of brass. These boilers help to boil the coffee filtered decoction and the unwatered cow's fresh milk on water steam. The coffee was also served in brass tumblers (drinking cup) placed on a brass deep bowl. The Coffee decoction was prepared by specially made coffee filters that works manually. The coffee filter container consists of two parts upper and lower container. On the upper container coffee powder and boiled water was added and closed with lid. And this upper container was placed on a lower container and the coffee decoction gets filtered or dripped for at least two hours to get good taste and aroma for degree coffee.

Make Kumbakonam Degree Coffee at Home

Materials needed

Cow's Fresh Milk - 200ml

Fresh Coffee beans - 100grams

sugar - to taste

water - as required

Coffee filter container or Coffee decoction maker

Procedure

  1. Use only Cow's Fresh Milk. Don't mix water in it. Store in refrigerator until before the preparation of coffee and thaw it before boil.
  2. First take the coffee beans of 100g and roasted till it lowers it weighs to 80g. This is the stage to get good blend and aroma.
  3. Now grind the coffee beans and put the powder in the filter or dripper. Allow dripper to get good decoction for two hours.
  4. Now boil the milk and take care that milk not forms any coagulation inside it or on surface.
  5. Now take a cup, and add first the sugar as required.
  6. Then, add the coffee decoction and then add the boiled milk in it.
  7. Mix all ingredients well and enjoy the Kumbakonam Degree coffee.
  8. Don't change the order of mixing the ingredients as sugar > Coffee Decoction >Milk
