Moist Limoncello Chicken Breast Filet Recipe
A few years ago when Danny DeVito appeared on the TV show "The View" just a bit inebriated, many of us had never even heard of limoncello,especially if you don't drink alcoholic beverages. Since that time though it has become quite a popular liqueur, usually served ice cold in small glasses as Italians' have done in Italy for a very long time.
The ingredients in limoncello simply contains lemon essence, water,sugar and clear grain alcohol.
Now with that little history lesson aside I would like to share a wonderful recipe that hopefully you"ll love and make over and over again
6 to 8 skinless & boneless breast filets (pounded thin)
2/3 cup chicken broth
1 tbsp butter or margerine
flour for dredging
1/4 cup limoncello (lemon Liqueur)
3 lemon slices
salt & pepper (to taste or diet)
2 tbsp fresh basil
Season chicken with salt and pepper and then drege with flour. Melt the butter or margerine in skillet and add chicken. Cook over medium heat until both sides are an even golden brown. Next add the chicken stock, limoncello and lemon slices. Cook an additional 5 minutes more to thicken slightly. Press the lemon slices with a wooden spoon to release juices from the lemon slices. Add fresh basil.
Serves 2 to 3 people
Double recipe to serve up to 6
Serve over white rice or noodles with a side tossed salad.
