Low Carb Healthy Recipes: Pork Tenderloin with Herb Rub

Looking for low carb healthy recipes featuring pork tenderloin? If you are, this one will prove a winner.  It is a wonderfully easy recipe that will fill the low carb healthy recipe bill but will also provide you with one of the most delicious ways to cook pork tenderloin!  I think the prep time was 5 minutes.

I recently stumbled across a cookbook on doing research regarding low carb healthy recipes for people with diabetes or to prevent diabetes. I found this recipe for low carb pork tenderloin in the cookbook called The New Family Cookbook for People with Diabetes.

Although it is a cookbook for people with diabetes, I found that the low carb healthy recipes were fantastic and actually fit quite well into my overall fanaticism regarding healthy recipes that are low carb.

If you are worried that pork tenderloin isn't as healthy as beef tenderloin or other meats, think again. Pork tenderloin actually has less calories than beef tenderloin and is still a great choice if you are looking for low carb healthy recipes.  Pork tenderloin is a delicious meat choice and this recipe features it well.

Low Carb Pork Tenderloin with Herb Rub - Part of Healthy Recipes

1 pork tenderloin = 4 servings

INGREDIENTS:

  • 1 pork tenderloin - about 1 pound
  • 1 tablespoon grainy Dijon mustard
  • 1 tablespoon fresh rosemary – or 1 teaspoon dried
  • 1 tablespoon fresh oregano – or 1 teaspoon dried
  • 1 tablespoon chopped fresh sage - or 1 teaspoon dried
  • 1 tablespoon chopped fresh thyme – or 1 teaspoon dried
  • Pepper
  • Cooking spray
  • I added tarragon and marjoram - about 1/2 teaspoon each or would add 1/2 tablespoon each when fresh is available


Low Carb Healthy Recipes: Pork Tenderloin Stats

Serving Size = 1/4 of pork tenderloin

  • Calories = 125
  • Calories from fat = 28
  • Total fat = 3 g
  • Saturated fat = 1 g
  • Cholesterol = 61 mg
  • Total carbs = 1 g
  • Dietary fiber = 1 g
  • Sugars = 0 g
  • Protein = 22 g
  • Exchange for diabetic counting = Lean meat 3

 


PREPARATION:

  1. Preheat oven to 450 degrees. Prepare shallow roasting pan and rack with cooking spray.
  2. Brush tenderloin with mustard.
  3. Combine herbs and pat evenly on the tenderloin, sprinkle with pepper.
  4. Place pork on the rack in roasting pan, set in oven and reduce heat of oven to 350 degrees.
  5. Roast until meat thermometer inserted in thickest part of tenderloin registers 145 degrees (about 25 minutes dependent on the size of the tenderloin).
  6. Remove from oven and let rest for 5 minutes. Carve into 1-2/inch slices and serve with pan juices.

I have to say that there were very few pan drippings at all but the meat was perfectly done and the best tenderloin I've made yet. The fact that it was so simple was the bonus!

The picture is in fact a picture of a beef tenderloin. The pork tenderloin turned out almost exactly the same way. It was a bit more done than rare beef but pink in the center. I think it was the best pork tenderloin I've ever made.

Beef tenderloin will be my next try with this recipe although will change it up a bit.

The leftover tenderloin slices are easily added to salads or used for other recipes as the meat is melt-in-your-mouth tender. The herb rub gave the bonus of flavor and enhanced the meat. The aroma while it was cooking was wonderful!

      Girlfriend - you'd better! Sounds delicious! I was a little dubious with that many herbs literally encrusting it but it turned out wonderfully. I think the basting with Dijon mustard helped. Now just want to find a nice little beef tenderloin and try that out! Have a wonderful supper and don't forget to tell me if it works!

      Darlene - my dogs are highly trained and well mannered at all times - I'm sure you know this from reading my hubs! Ha ha - seriously I keep both of them in the house a lot and when I'm cooking, especially Griffin is a rug in my open area kitchen, no doubt looking for droppings. I never, ever, ever leave anything out on the counters though 'just in case' I have to leave the room for a moment or turn my back. He loves me for my cooking, no doubt!
