Low Fat Chili-Macaroni Skillet

Ingredients

  • 1 lb lean ground beef
  • 1 15oz can red kidney beans, rinsed and drained
  • 1 14.5oz can dried tomatoes, undrained
  • 1 8oz can tomato sauce
  • 1 4oz can diced green chile peppers, drained
  • 3/4 cup chopped onion
  • 1/2 cup dried elbow macaroni
  • 1/2 cup shredded cheddar cheese
  • 3 tsp chili powder
  • 1/2 tsp garlic salt

Instructions

  1. Cook your chopped onion, and ground beef in a large skillet over medium heat until the onion is tender, and the meat is brown. Drain off the fat.
  2. Stir in the red kidney beans, undrained diced tomatoes, tomato sauce, green chile peppers, elbow macaroni, chili powder, and garlic salt. Bring to a boil. Reduce the heat to low, and simmer until the elbow macaroni is tender (approximately 20 minutes) while stirring often. Remove the skillet from heat.
  3. Sprinkle the shredded cheddar cheese evenly over the skillet. Put a lid over the skillet, and wait about 2 minutes for the cheese to melt. Serve and enjoy!
