Delectable Soups Recipes
Hot, Hearty Soups. Yum!!!
It's getting to be that time of year. At least it's trying to get there here in Florida. I keep waiting. Anyway, my thoughts have turned toward making soup. There's nothing better that a hot, hearty soup to warm you up.
Soups are know for their healthy contents. After all, they are filled to the brim with vegetables. What a better way to lose weight than by eating delicious soups. By making sure they are low fat, low cholesterol, and low sodium you make it even easier to shed the weight. So get busy and start making those soups.
Low Fat Potato Soup
Ingredients:
1 3/4 cups peeled, diced potatoes
1 med onion, chopped
1/4 cup chopped celery
1/4 cup finely chopped green pepper
3 pkgs Herb-ox sodium free chicken bouillon
1/2 tsp pepper
3 tbsp cornstarch
1 can (12 ounces) fat-free evaporated milk, divided
Directions:
In a large saucepan, combine the potatoes, onion, celery, green pepper, broth and pepper.
Bring to a boil. Reduce heat; cover and simmer for 15-18 minutes or until vegetables are tender.
Combine cornstarch and 1/4 cup milk until smooth; stir into potato mixture. Add the remaining milk.
Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat.
Make 5 servings of 1 cup each.

Low Fat Broccoli Cheese Soup
Ingredients:
1 bag of frozen chopped broccoli
2 cans fat free cream of celery soup
1 can fat free cream of mushroom soup
1 cup of nonfat milk
1 cup reduced fat shredded four cheese mexican blend
Directions:
Cook broccoli to desired tenderness.
In large saucepan, mix all 3 cans of soup with desired amount of milk.
Add cheese. cook on medium low. Stir often.
When broccoli is cooked, add to soup mixture.
Continue cooking and stirring till the cheese is melted.
Makes 6 seving of 1 cup each.

Low Fat Vegetable Soup
Ingredients:
4 large green onions
1 head cabbage
1 bunch celery
1 can V-8 vegetable juice
2 cans chopped tomatoes
2 green bell peppers
1 large turnip root
1 package onion soup mix
1 tsp salt
1 tsp pepper
3 pkgs Herb-ox sodium free beef bouillion
Directions:
Cut vegetables into small pieces; add water to dutch oven until vegetables are coverd with water.
Add onion soup mix, salt, pepper and bouillion and blend well.
Boil fast for 10 minutes; reduce heat and simmer until vegetables are tender.
Makes 6 servings.

Chicken Rice Soup
Ingredients:
1 container (26oz) Swanson Unsalted Chicken Cooking Stock
1 cup water
1/8 tsp poultry seasoning
2 med carrot, sliced
2 stalk celery, sliced
1 small onion, finely chopped
1/4 cup finely chopped green pepper
1 cup uncooked regular white or brown rice
2 cups leftover chopped chicken
Directions:
In dutch oven mix broth, poultry seasoning, thyme, carrot, celery and onion.
Over medium-high heat, heat to a boil.
Reduce heat to low.
Cook rice in separate pan according to package directions.
Stir into stock mixture, add chicken and cook for 20 minutes more.
Makes 6 servings.
