Madras Chicken Curry

Madras is a place in south india... Madras curries are usually very spicy because of the heavy use of chilly powder... in my recipe here I have used store bought Madras curry powder. It is quick and very easy recipe if you use the store bought masala.

Madras Chicken Curry

Yields: Serves 4 Adults

Ingredients

  • 1 kg Chicken
  • 1 Tablespoon Madras curry powder
  • 1 Tablespoon Tumeric
  • 1 Tablespoon Garlic paste
  • 4 Green chillies
  • To taste Salt
  • 1 large Onion
  • 1 Tomato, chopped
  • 1/2 cup Corriander, chopped
  • 1 Teaspoon Mustard and cumin seeds
  • Oil

Method

  1. Heat oil in a pot add mustard and cumin seeds fry until they start to pop.
  2. Add sliced onions and sauté until golden brown. Add garlic paste and chillies cook for 1 min. Add madras curry powder and tumeric fry for 2mins.
  3. Add chicken and mix well cook until chicken is cooked through about 15 to 20 mins depending on the size of the chicken cubes.
  4. Add chopped tomatoe and cook for 5mins add coriander and mix well. Switch off stove and serve hot with Roti, bread or rice.

Notes

To make the madras chicken curry with gravy add 2 cups of water in step 3 along with chicken.

For mild taste skip the chillies

Please note that Madras curry powders are usually hot and spicy even the store bought ones.
