Easy Make Ahead Shrimp Appetizer Recipes: Scampi, Curried and Sticky BBQ

Updated on December 20, 2010

The guests at our store frequently requested recipes that would make entertaining easier. These three recipes fit the bill: Sticky BBQ Shrimp, Shrimp Scampi and Curried Shrimp. They are easy to prepare, freeze well and can be used as an appetizer or as a main entree.

According to the George Mateljan Foundation, shrimp is one of the world's healthiest foods. Check out the page on shrimp to learn about the health benefits and nutritional profile of this tasty crustacean. Once you do, you will want to incorporate more of this protein in your diet. In addition to being low-fat and low-calorie, shrimp are also nutrient-rich in selenium and a good source of vitamin D and vitamin B12.

The recipes below call for 2 pounds of peeled, deveined raw shrimp. The tail can be left-on (nice for appetizers) or pulled off. As always, we suggest making up extra batches to keep in the freezer. If one pound is enough for your family, then divide the ingredient amounts listed below in half and make 2 smaller batches.

See the "Tips" section for more information on selecting shrimp, portions sizes and serving suggestions.

Preparation Date:________________

  • You should expect to serve about 4 ounces per person. Depending upon the size of the shrimp (and the appetites at the table,) this portion may leave a person wanting for more. Since you never want to have this happen at a party, plan on having extra servings on hand. Large shrimp are always desirable. However, you may want to use a slightly smaller medium-sized shrimp for main entrees so there are more shrimp!
  • Frozen shrimp will work in this recipe.
  • Leave the tail for appetizers or provide some toothpicks on the side.
  • Serve over pasta, rice or couscous as a main entree. Use whole wheat products for a healthy presentation.
  • Prepare extra sauce so some can be spooned over rice and vegetables.
  • Stir in cooked vegetables for a one-dish meal.
  • For best quality, consume within 2-3 months of freezing.
