Sweet cherries, salty prosciutto, creamy ricotta and mozzarella cheese blend the delicious taste on toasted bread, It's an ideal munching for the house party.

Ingredients for Cherry Bruschetta

  • 1 medium ciabatta loaf
  • 3 tablespoons of olive oil
  • 150grams mozzarella cheese
  • 100g ricotta
  • 12 Cherries
  • 80grams prosciutto
  • 12 mint leaves

Cooking Instructions

Step 1

Preheat the grill to 400 degrees for 5 minutes.

Step 2

Cut ciabatta loaf into 12 equal slices (Ensure that you cut the loaf lengthways). (For better cut utilize Serrated Bread Knife)

Then apply olive oil on both sides of bread slices.

Step 4

Spread ricotta & red onion mixture equally on toasted bread slices.

Cut the sweet cherries in two pieces and place them on top of each bruschetta with the prosciutto.

Step 6

Spread mozzarella cheese over each bread slices.

Step 7

Grill the bread in for 3 minutes. (Ensure that it is crispy and golden brown in color).

Step 8

Sprinkle a bit of olive oil and garnish with mint leaves.

Step 9

Serve hot for a delicious taste.

Suggestions & Precautions

  • You can add salt or black pepper powder as per your taste.
  • Don't grill more than 5 to 7 minutes.
  • Don't add excess olive oil (It may spoil the taste).

      Yeah, bruschetta with tomatoes is very common. If you get a chance then try this bruschetta with cherries. I am sure you will love it. :)

      This is interesting. I have made bruschetta with tomatoes, mushrooms, eggplants, olive and artichokes, but never a bruschetta with cherries! Once cherries are in season, must give this a try.
