Spices Preparation For Indian Cuisine
If you are interested in Indian cuisine you should prepare some spices (Masala) which are most frequently used.
Cloves (Laung ) 2.5gm
Cardamom(Elaichi) 5 gm
Cinnamon(Dalchini ) 5 gm
Mace 2.5 gm
Nutmeg 1/4 nut
Bay leaf(Tejpatta ) 2 nos
Black peppercorn( sabut kali Mirch) 2 gm
Sauté all the ingredients for a while. Grind together to make a fine powder. Keep it in a air-tight jar.
Cumin seeds(Jeera ) 25 gm
Coriander seeds(Dhania ) 25 gm
Red chilli(Lal Mirch ) 2 nos
Bay leaf(Tej Patta ) 1 no
Sauté all the ingredients till the seeds are roasted. Grind together to make a fine powder. Keep it in a air-tight jar.
Fenugreek seeds(methi )
Cumin seeds(Jeera )
Fennel seeds (Saunf )
Mustard seeds (Sarson )
Onion seeds( Kalonji or kala jeera )
Mix all ingredients in equal quantity and keep it in a jar.
