Lemon Curd

If you love the taste and flavor of lemon meringue pie then you will love a lemon curd it's a soft tasty custard packed with flavor that is really simple to prepare it has really simple ingredients that are cooked together until they become thickened and could be used many way like a filling for a pie, mixed in a cake batter even as a spread for your favorite piece of bread ...But today we are going to use in a filo dough cup that you can buy at your local supermarket.

Were going to start by getting your filo dough out the also grab out your cupcake or muffin pan open your filo dough and spray your cupcake pan lightly and place your filo dough in your cupcake pan and bake by following the directions on the package. Then set aside to cool until ready to fill.

Now lets make the lemon curd:


6 egg yolks

1 cup of sugar

6 tablespoons of unsalted butter, cut into pieces

1/2 cup of fresh lemon juice

1 1/2 tablespoons of grated lemon peel


Combine all the ingredients in a heavy bottom sauce pan, cook over medium-low heat stirring constantly until the butter is completely melted and the mixture thickens slightly. Do not allow to boil. Remove from the heat, transfer to a bowl and cool. Pour filling into the filo dough cups top with whipped cream then serve.

      My mother told me to post my recipe for lemon curd she eats it with vanilla wafer cookies so please carol and dirt farmer please try it is very easy to make and taste so good.

      this is by far one of my most favorite things. I have only bought some and never tried to make it. Looks easy enough and I can almost taste the lemons...Voting up and pinning.
