Making The Perfect Quesadilla

Quesadilla's are a quick, easy, healthy meal you can toss together in very little time.

Place a large soft flour tortilla in a dry non-stick pan over a low to medium flame. (Do not put any oils in the pan yet.) Cook approximately 20 seconds and flip to the other side. Cook another 20 seconds. When you feel the tortilla is getting soft, place it on a plate. Spread sour cream on one half, then layer in all your favorite ingredients on top. I use shredded cheddar cheese and one other cheese like provolone or swiss or parmesian. Sprinkle with thinly sliced black olives, finely chopped tomato, crushed fresh garlic and a meat of your choice. Chicken works nicely. I usually drop a few dollaps of salsa on before folding in half. You'll find the tortilla folds easily without cracking because you warmed it in the pan.

Place a small amount of olive oil in the pan. It will heat up quickly. Spread it around and place the quesadilla in the pan. It will only take about 45 seconds to a minute to brown nicely so keep a close eye on it. When it's browned to your taste, flip it over placing a small amount of olive oil in the pan and again, shake the pan gently to spread the oil evenly under the quesadilla. If desired, you may cover the quesadilla to keep the heat in and melt the cheese all the way before the quesadilla is too brown on the outside.

When browned to perfection, remove lid, remove quesadilla from pan placing it on a plate. I usually place a fork underneath to life the quesadilla up just a little bit. This allows air to circulate under the quesadilla so it cools. By doing this the bottom of the tortilla to remains crunchy and does not get soft from the moisture and heat otherwise trapped against the plate.

Once cooled, use kitchen scissors to make clean, neat slices for easy portions to eat. This also minimizes the cheese and ingredients from slipping out when cutting. Place on a serving plate and garnish as desired.

This is a great meal you can throw together in a hurry. It's not only fast but it's healthy and usually an easy pleaser since you can use each person's favorite ingredients when putting them together.

  • Finely chopped tomatoes
  • Thinly sliced black olives
  • Crushed garlic
