Benriner Mandolines come with 4 blades. The flat blade cuts perfect slices and can be adjusted for thickness. The fine toothed blade cuts interesting shapes, great for garneshes. The Medium toothed blade is perfect for stir-fries and the coarse-toothed blade can make chunky and crisp cuts of vegetables or fruits.

There is a safety device, however many people say the Benriner safety device is not very useful. You may want to consider ordering a pair of safety gloves, but personally I have used this style of mandoline for years with no problems.

All in all this is a very useful and effective tool, at a very reasonable price. Another nice option is the Kyocera ceramic blade Benriner style mandoline. A ceramic blade is super sharp, as they hon it to a one molecule thickness (something impossible to do with steel). Ceramic knives work great too, every since purchasing one myself, I have been amazed at how well they cut vegetables.  

Zyliss Mandoline

Zyliss Mandolines are another great option. Zyliss, a Swiss Company, is internationally famous for well made, finely crafted kitchen tools. They are known for durability and for the high quality of their engineering.

Zyliss produces a variety of high quality mandolines which include multiple blade inserts. A typical Zyliss mandoline, includes two (1/8" and 1/4") julienne blade inserts, and four (1/32", 1/16", 1/8", and 1/4") slicing inserts. The blades are high-carbon stainless steel, and the safety guards are designed to protect your hands. Zyliss also makes a very highly rated slicer/grater!

Zyliss mandolines are dishwasher safe and include a 5 year manufacturer warranty. The fold up style is nice if you are concerned about space. If you like the Zyliss mandoline, also consider the Swissmar, it's highly rated and very competitively priced!
