When it comes to marinating meats you have to have the right ingredients to make that meat marinate to perfection...You have to have the right ingredients and the right balance of those ingredients so all the flavors blend with perfect harmony, and that's what I want to do today share with you a great recipe for Marinated Roasted leg of Lamb that I'm sure your going to love.

Marinated Roasted leg of Lamb

Ingredients

1 leg of spring lamb, boned and tied

1/4 cup of extra virgin olive oil

3 cloves garlic

1/4 cup of fresh rosemary

3 yellow onions, thinly sliced

1 bay leaf

20 fresh sprigs of parsley

1 teaspoon of sea salt

1/2 teaspoon freshly ground smoked black peppercorn

1 quarter bottle of red wine

Water as needed

Methods

To begin on this quest to make best marinated roasted leg of lamb follow these cooking instructions.

Put slivers in the surface of meat and using 2 of cloves garlic insert garlic into the slivers. Rub leg well with the fresh rosemary and put it in a deep pot or clean bucket.

Add the olive oil,yellow onion, bay leaf, fresh parsley, and remaining garlic, sea salt, fresh rosemary,smoked peppercorns and enough red wine, and enough cold water to cover the meat.

Marinate in refrigerator for 3 to 48 hours, turning several times to allow the lamb to marinate evenly. Keep some of the marinade for basting while the meat is roasting.


To cook the leg of lamb place the lamb in a roasting pan and roast at 375, basting occasionally with some of the marinade.

To cook this leg of lamb perfectly allow it to cook 15 minutes per pound for rare piece of lamb and for about 18 minutes per pound for medium rare. If you use a meat thermometer, the lamb will be cooked perfect when the thermometer registers 130-135.

This will give you the perfect piece of lamb when you take the lamb out of the oven let it rest for a few minutes the lamb will keep on cooking but as long as it below 145 you will have a very juicy piece of lamb...try this recipe and enjoy.
