Massachusetts Hermit Cookie Bars

  • 1/2 Cup Shortening
  • 1/2 Cup Molasses
  • 1 Cup White Sugar
  • 1/2 Cup Warm Coffee
  • 1 Teaspoon Baking Soda
  • 1 Egg
  • 3 Cups All-Purpose Flour
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Ground Cloves
  • 1 Cup Raisins


  1. Preheat your oven to 350 degrees and grease your cookie sheets. In a large bowl cream together Sugar and Shortening until it's a smooth consistency. Once smooth add in Molasses and your Egg.
  2. Dissolve Baking Soda in the Warm Coffee then add into the Molasses mixture. Combine together Salt, Flour, Cinnamon, and Cloves and gradually stir it into the batter. Now add in the Raisins and form your dough into 4 long strips lengthwise and set on the the cookie sheets.
  3. Bake for approximately 12-15 minutes and allow to cool for 5 minutes, now cut strips each into 2 Inch bars. All done and ready to eat!
