Meatloaf Infused With Caramelized Vegetables
The First Slice
The aroma in my kitchen right now is a spectacular combination of scents, all good! The flavor of the burger is enhanced by the onion, celery, pepper and grated carrots.
My hubbie bought me a meatloaf pan a few years back. The pan is like a breadpan except it has an insert that the burger sits on while it baked, and the hamburger great drains into the bottom. When the burger is done, you simply loosen the long side of the meatloaf with a knife and lift the meatloaf out of the pan.
Mine let go of the lifter once I had it tipping over the waiting storage container. I did give it a little spray with cooking spray
- 2 eggs
- 1 package McCormick Meatloaf Seasoning
- 1/2 cup milk
- 2 pounds uncooked ground beef
- 1/4 cup sweet pepper
- 1/4 cup onion, diced
- 1/4 cup celery, diced
- 1/4 cup carrot, shredded
- 2 slices potato bread, cubed
- 3 tablespoons butter
- 1/2 teaspoon old bay
- 1/4 teaspoon summer savory
- 1/4 teaspoon Italian seasoning
- 1 teaspoon johnny's hunter blend
- 1/4 teaspoon thyme
- 1/4 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
Brown Vegetables and Bread Cubes
In a frying pan, melt some butter, and mix your cut vegetables in with the butter, stirring to coat. I had frozen carrot shreds, so I warmed them in the microwave before I added them to the onion, peppers and celery.
Once they looked a little bit browned, I added the bread cubes, and stirred to coat the cubes with the vegies. Then, I moved the pan to a cooler spot.
At this point, I had my ground burger mixed with the egg mixture. I then added in my panful of vegies, stirred the concoction and poured it into a specially made meatloaf pan.
Smooth it flat and place in an oven at 375 degrees, central rack, for one hour and twenty minutes. It should be at least 165 degrees at that point. Technically it's done at this point.
Some people may bake it with ketchup on it, but I am not a ketchup person, so I did not use ketchup. It's good without it. I won't knock any dyed in the wool ketchup fans for putting some on when they eat it.
The plan was to make it today, and eat it reheated. We are having something else, tonight...
