Fast, Healthy Meatloaf Recipes for Every Occasion

Updated on March 8, 2011

Try any one of these delicious meatloaf recipes - they're guaranteed to be a hit! Use ground turkey for the lowest fat content (if you don't like the taste, try a mixture of half-turkey, half-lean beef), or use lean ground beef, the old-fashioned way! Whatever you choose, you're guaranteed a hearty meal without the hassle of a long prep time. Enjoy!

Mama's Meatloaf

  • 1 pound ground meat
  • 2/3 cup skim milk
  • 1/2 cup cracker crumbs
  • 1/4 cup ketchup
  • 1/2 cup finely chopped onion
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 egg, beaten

Preheat oven to 350 F. Mix all ingredients together in large bowl. Form into a loaf in bread pan or baking dish. Top with more ketchup as desired. Bake 1 hour.

Tip: Use a two-piece meatloaf pan to keep meat out of drippings

Honey-Dijon Meatloaf

  • 1 1/2 pounds ground meat
  • 1/3 cup dry plain bread crumbs
  • 1/2 cup chopped onion
  • 1 tsp chopped dried leaf basil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 eggs
  • 3 Tbsp Dijon mustard
  • 3 Tbsp honey

Preheat oven to 350 F. Mix meat, crumbs, onion, basil, salt, and pepper. Stir eggs in, thoroughly but gently. Shape into loaf in pan or baking dish. Mix honey and mustard, brush half of mixture onto loaf. Bake 30 minutes, brush loaf with the rest of the mixture. Bake additional 30-45 minutes. Garnish with diced green onions, if desired.

Cajun Meatloaf

  • 2 pounds ground meat
  • 1 egg
  • 1/3 cup finely ground bread crumbs
  • 1 medium tomato
  • 1/4 cup onion
  • 1/4 cup red bell pepper
  • 1/4 cup celery
  • 1 1/2 tsp Cajun seasoning
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 2 tsp Worcestershire sauce
  • Instructions

Preheat oven to 350 F. Remove seeds from tomato and pepper, finely chop all vegetables. Combine all ingredients, form into loaf, place in foiled or 2-piece meatloaf pan. Bake 60-70 minutes.

(If desired, remove from oven 10 minutes before done and spread ketchup or chili sauce over top, replace in oven, bake another 10 minutes.)

    Chili Meatloaf

  • 2 pounds ground meat
  • 3 Tbsp minced onion
  • 1 tsp salt
  • 1 1/2 tsp chili powder
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 2 eggs, beaten
  • 1/2 cup cracker crumbs
  • 1 cup canned diced tomatoes
  • 16-oz can kidney/pinto beans
  • Instructions

Preheat oven to 350 F. Drain, rinse, and partially mash beans. Combine all ingredients, form into loaf. Place in 2-piece meatloaf pan (see "Use These Pans" above) or line bread pan with foil beforehand. Bake 75-90 minutes, top with low-fat slices of pepperjack cheese or additional diced tomatoes, as desired.

    Cranberry Meatloaf

    • 1/4 cup firmly packed brown sugar
    • 1/2 cup whole cranberry sauce
    • 1 1/2 pound ground meat
    • 1/2 pound ground cooked ham
    • 3/4 cup evaporated milk
    • 3/4 cup cracker crumbs
    • 2 eggs, beaten
    • 2 Tbsp chopped onion

Preheat oven to 350 F. Grease loaf pan. Spread sugar over bottom of pan, followed by mashed cranberry sauce. Combine remaining ingredients, shape into loaf, place in pan on top of sugar and cranberry layers. Bake 1 hour.

The meatloaf is not sugar free, ketchup is mainly sugar!

I tried the mama's meatloaf recipe, but it didn't turn out well. It fell apart and it wasn't fully cooked. I think it needs more ingredients like 1 1/2 lbs of ground beef (I used an extremely lean beaf of 93/7, but you can probably use 1 lb if you make sure it's at least 80/20), 1 cup of bread crumbs, and 2 eggs. I also think the cooking time should be at 375 for at least an hour and a half.

I never really thought about all the different types of meatloaf that were around. The cajun meatloaf is definitely one that I'm going to try. :)
