Mediterranean Black Eyed Pea Salad

Mediterranean Salad
This is probably not considered a "true" Mediterranean salad, but I love it. So I'm sharing it. All the ingredients are fresh, and the added black eyed peas give you protein. You can also substitute garbanzo beans, or Quinoa or add all three.
I make my black-eyed peas in my Instant Pot, if you don't have one I strongly suggest getting one, they make any vegetarian's life a lot easier. I don't eat meat, but other family members do and we use the pot for everything.
You can make it exactly as this article states, or you can add in other things you love in a salad. The really are no rules.
Ingredients
- 2 cups Black Eyed Peas, Cooked
- 1 small red onion, diced
- 1/2 large cucumber, diced
- 1 can black olives, sliced
- 1 pint cherry tomatoes, tossed in
- 1 pint cherry tomatoes, tossed in
- Organic Mixed Greens
- 1 cup Feta Cheese, Crumbled
- 1 cup Garbonzo beans, Optional
- 1 cup Quinoa, Optional (cooked)
Instructions
- Cook your Black-Eyed Peas, Quinoa or Garbanzo Beans. Have them cooled.
- Chop up all your veggies and mix with your peas or another choice of protein.
- layer chopped ingredients and feta cheese on your salad.
- Add your favorite salad dressing and enjoy!
