Mediterranean Shrimp Soup

It's time to get out that crock-pot.....If you love great tasting soups then your going to love this Mediterranean style shrimp soup, not only is this soup good but it's great tasting, don't get me wrong there are a lot of ingredients to add to this dish but its's super simple and the crock-pot will do all the cooking all you have to do is mix it all together let it cook and smell as all the flavors are marinating together.....So come get out the crock-pot let set it and for get it for a few hours.

''Mediterranean Style Shrimp Soup''

If you have 20 minutes then this can be in your crock-pot and cooking, the results will be rewarding and your family and friends will love you for it .....but one good thing you will not break a sweat.


2 cans (14 1/2 ounces each) chicken broth

1 can (14 1/2 ounces) italian style diced tomatoes

1 can (8 ounces) tomato sauce

1 medium yellow onion, rough chopped

1/2 medium green bell pepper, rough chopped

1/2 cup orange juice

1/2 cup dry white wine (optional) but in my opinion it makes the flavor pop

1 jar (2 1/2 ounces) sliced button mushrooms

1/4 cup sliced pitted black olives

2 cloves garlic, minced

1 teaspoon dried basil

2 bay leaves

1/4 teaspoon whole fennel seeds, crushed

1/2 teaspoon ground black pepper

1 pound medium raw shrimp, peeled and divined

salt to taste

Place all ingredients except shrimp in a crock-pot slow cooker. Cover, cook on low 4 to 41/2 hours or until vegetable are crisp-tender.

Stir in shrimp. Cover, cook 15 to 30 minutes or until shrimp are pink and opaque. Remove and discard bay leaves., if salt is needed you can add it at this time then stir and let sit for another minute or 2....then serve and enjoy.

This great tasting soup can serve 6 to 8 people, but it also great for left-overs and easy to freeze and reheat.
