Cooking Menudo a Filipino Style Recipe

This Filipino menudo is one of the popular recipes for Filipinos and the tomato sauce is used with potatoes, bell pepper and chickpeas.

Chunks of pork and also liver are best for this kind of recipe in this Cooking Menudo a Filipino Style Recipe. But you can just have pork chunks, anyway.

Most of us Filipinos know how to cook this delicious recipe but I heard that in Mexico, menudo dish is also very popular. I even heard that in the United States, this dish is also served.

Another best cure for hangover is the tomato based soup. This is made with the pig's feet and/or beef stomach (tripe or lining). My friend taught this recipe, then.

My good friend cooks like no other in the world and that is why he taught me. I congratulate myself for almost duplicating his cooking skills.

Menudo dish has reddish in color. This is because of the annatto seeds or the achuete.

The cubes around the dish are the potatoes.

Ingredients

  • 1 cup Potatoes, cubed
  • 1 cup Pork Liver, cubed
  • 2 pounds Pork Shoulder, cubed
  • 1/2 cup red and green pepper, cut in strips
  • 1 small can Tomato Sauce
  • 2 pieces Tomatoes, sliced
  • 1/2 cup canned chickpeas or garbanzos
  • 1 - 2 cups chicken broth
  • 2 tablespoons Soy Sauce
  • 1/4 cup white Vinegar
  • 4 cloves Garlic, minced
  • 3 tablespoons Achuete or Annato Seeds
  • 4 tablespoons Cooking oil
  • 1 large Onion, chopped
  • Salt and Pepper, to taste

Prep time: 15 min
Cook time: 25 min
Ready in: 40 min
Yields: Serve with rice.

Cooking Menudo a Filipino Style Recipe

  1. Mix the soy sauce, vinegar, cubed pork meat with half of the water in a saucepan and cook until the meat is tender. Just if needed, you can add a little water.
  2. Next, heat the achuete seeds in oil. This time, remove the seeds. This is done in a separate saute pan.
  3. This time, saute the garlic, the onion and the tomatoes and carefully (because it is hot) add the boiled pork and cook for a few minutes and just leave out the liquid part.
  4. Fourth is the adding of the cup of the chicken broth and potatoes. Simmer until potatoes are tender. Put more broth if it is dried out before the potatoes get tender.
  5. Finally, add the liver, chickpeas and bell pepper and simmer for 3-5 minutes and season the pork menudo with salt and pepper.
  6. It is always best to serve this dish with rice.

Tips on Cooking Menudo a Filipino Style Recipe

- You can replace pork liver with canned liver.

- Remember when cooking pork, it will shrink so bigger sizes are advised.
