My mom used to make the best peach cobbler on Sundays for dinner. She'd serve it warm with a scoop of cold, ice cream. Sometimes, late at night, I get to craving some warm peach cobbler, but I'm too tired to put a big batch in the oven. On those nights, I use this single-serving recipe that I make in my microwave. It's easy to throw together, and it only takes a few minutes to cook.

Ingredients

  • 1 4-ounce cup peaches, diced
  • 2 tablespoons white sugar
  • 2 tablespoons brown sugar
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon fresh lemon juice
  • 1/2 teaspoon cornstarch
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 1/2 tablespoons unsalted butter, chilled and cut into small pieces
  • 1 tablespoon milk
  • 2 1/4 teaspoons white sugar
  • 1/4 teaspoon ground cinnamon

Microwave Peach Cobbler for One

  1. In a small bowl, mix the peaches, 1 tablespoon of the white sugar, 1 tablespoon of the brown sugar, cinnamon, nutmeg, lemon juice and cornstarch. Mix evenly.
  2. In a separate bowl, combine the flour, 1 tablespoon of the white sugar, 1 tablespoon of the brown sugar, baking powder and salt. Blend in the butter with a fork until the mixture is made up of coarse crumbs. Stir in the milk just until the dry mix is moistened.
  3. Place the bowl containing the peaches into the microwave and microwave on high for 30 seconds. Top the peach mixture with the butter mixture.
  4. Mix the 2 1/4 teaspoons white sugar and the 1/4-teaspoon ground cinnamon. Sprinkle this cinnamon sugar mix over top of the dish. Cook in the microwave on high for another two minutes or until done. Cook times may vary slightly depending on your microwave.
