My Summertime Memory

There are some pie recipes that have been passed down from generation to generation. Millionaire Pie is one of those recipes. I am at least the third generation in my family to fix this dessert and I am not sure how many people before me in my family, knew of this recipe. There are a lot of great cooks down the line in my family and I am sure that they are out there.

I had never had this great dessert until my mom made this pie for us. This recipe as I remember, came out of an old recipe box that my mom has. It is a very old recipe box that is made of metal and it's orange, pink and yellow. You know it's from the 70's with that color combination! Before you and I start making fun of this recipe box too much, you must also know that there are also some great recipe secrets, that come from that box. You can tell that it is an older recipe box because there are not any metal recipe boxes that are made any more, if any. I can only find them now at flea markets, garage sales and any place that you might find those random unexpected finds.

It's a cool pool-side dessert, great for BBQ's, church picnics, birthdays, work lunches and family gatherings. In fact, I can't think of a place that I wouldn't be able to take this recipe. You could cut it into small squares and served at a wedding shower.

Once again, as with all of the recipes that I tend to prepare they have to have one thing in common and that is, that this recipe is easy and fast to make. This one is no exception. Another trick to making this recipe better is to make it one day ahead of time and place it in the freezer and then thaw it out before you are ready to serve it.

I do have very fond memories of this recipe. My mom would make this pie for us during the summertime. We didn't have dessert after meals a lot of the time so, when we did get something sweet after a meal, we were very thankful and also it was a great treat. This is cheap dessert and also one that is very flavorful.

At birthdays, along with a birthday cake, she might make a Millionaire Pie. This would be considered the "grown-up" dessert for the party. Of course, I liked it all except for the nuts but, they can be left out of the pie if you are making this dessert and there are going to be more children eating the pie more than the grownups will be eating it. The adults may prefer that the nuts to be left in this dessert. I know a lot of people do like the nuts in the dessert so, by all means put them in there, if you want them. On the other hand, there are some people who have allergies to certain nuts. So, you might want to be careful when adding nuts to this recipe. However, usually the people that have an allergy to nuts, know it and of course, they avoid food that contain the things that they are allergic to. Just to make it easier on yourself, serve them in a bowl on the side. Then, your guests that like nuts can add them to your pie if desired.

This is just a great light, cool, crisp dessert. Once it sits for the required two hours to "set", you may serve at this time. The longer that you can let this dessert sit, the colder it will be. Once the flavors have a chance to blend, this dessert only gets better. When you are ready to serve it, the slices will just come out of the pan. I think that this would be an elegant dessert for a bridesmaid dinner or at a baby shower.

I always wondered about the name of this recipe. I wish that we could eat this dessert and become rich? Are you trying to get rich by eating it? LOL!

This recipe makes 2 pies so, that you can take one to your function and freeze the other one or take them both to your particular function.

  • 1 can eagle brand milk
  • 1 can pineapple, sliced into bits
  • 1/4 cup lemon juice
  • 1 carton cool whip, thawed
  • 1/2 cup pecans, optional
  • 2 pie crusts, baked

Summertime Fun

I hope that you enjoy this favorite of mine. This is a great dessert to be served in the summertime. It is a great picnic, pool party or birthday party dessert. When you first make the dessert, just put this dessert in the refrigerator to let the flavors blend and the dessert gets super cold in the process.

It is a cool, crisp dessert that is sure to please everyone. You can add nuts to this dessert if you like or, you may leave them out.

If you have anyone who loves pineapple, this is a great dessert for the pineapple fans out there. This is just a simple and great dessert. Kids even love this dessert (maybe without any nuts). The flavors are simple in this dessert but, they are a great flavor combination. If the pie is still frozen, it is easy to transport. You can let if thaw out while being pool side or at a friends' house.

This recipe does sound interesting, sort of like a key lime pie made with lemon juice rather than lime. I like it. When summer comes back around I'll give this one a try.
