Minnesota Chocolate Zucchini Cake

Ingredients

  • 1/2 Cup Butter, (Softened)
  • 1/2 Cup Vegetable Oil
  • 1 3/4 Cup Sugar
  • 2 1/2 Cups All-Purpose Flour
  • 2 Eggs
  • 1 Teaspoon Vanilla Extract
  • 1/4 Cup Baking Cocoa
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Ground Cloves
  • 2 Cups Zucchini, (Shredded)
  • 1/2 Cup Buttermilk
  • 1 Cup Flaked Coconut, (FOR FROSTING) (Optional)
  • 6 Tablespoons Butter, (softened)
  • 2/3 Cup Packed Brown Sugar
  • 1/2 Cup Chopped Walnuts
  • 1/4 Cup Milk

Instructions

  1. Preheat oven to 325 Degrees and in a mixing bowl beat together Butter, Sugar, and Oil. Add in eggs one at a time and mix well together. Next beat in Vanilla.
  2. Combine together Cocoa, Flour, Baking Powder, Baking Soda, Cloves and lastly your Cinnamon. Add to batter alternating back and forth with Buttermilk and fold in the Zucchini.
  3. Pour into a greased 13x9x2 Inch pan and bake for 45-50 minutes or until it passes "toothpick test". Allow to cool once done.
  4. For icing combine all the frosting ingredients and spread on cake while its still warm and broil 4-6 Inches from the heat for approximately 2-3 minutes. Enjoy!

      This looks like a good recipe. I love chocolate cake and this chocolate zucchini cake looks really good and delicious as can be seen in the image you have of the cake. It doesn't seem all that hard to make at all.
