How to cook a mixed fish Dish, a Delicious Seafood Recipe

Alternative fish

I grew up in a green-grocer’s shop, which was also a fishmonger and sold game too; so we always had an interesting table even in the more austere times of the 50’s. We always had plenty of fish and fish-bits to eat up too, so Mum had lots of ideas for cooking fish. This was a favourite summer fish meal; Poached mixed fish. Also I have done this hub in association with my hub about the waste of fish due to the quota policy.



RECIPE FOR COOKING WHITE FISH

What you need

1lb of mixed white fish, [any will do, but try to get varieties such as; Pollack, monk fish, turbot any of the fish that aren’t in danger}

8 mussels

8 scallops [I like them best with the roe still attached but you can just get the meats]

8 King prawns or tiger prawns

6 fish sticks.

4 shallots

3 cloves of garlic

1 tbs olive oil.

A sprinkle of salt and a little white pepper.

1 tsp of dried Dill, Thyme, Parsley, paprika

½ cup white cooking wine or any decent white wine.

2tbls lemon juice

1tbs white wine vinegar


Here’s what you do;

HOW TO MAKE A CHEESE WHITE SAUCE

1 pint milk, 2 tablespoon of corn flour [or try arrowroot powder] ¼ pound of grated cheese [whatever you prefer] 1 tbles butter.

A heavy deep frying pan with a lid.

HOW TO MAKE YOUR FISH DISH

Chop up the shallots and garlic; heat the pan put in the oil, add the shallots and lightly fry until soft add your white wine and then your white fish, cook for 3 minutes now add the mussels, scallops, prawns and garlic. Reduce on a gentle heat. Season with salt and white pepper, shred the fish sticks with your fingers and put over the mix, now add the lemon juice and vinegar sprinkle the herbs over the top. Put the lid on the pan for a couple of minutes so that everything is poached.


White Sauce

Make your white sauce mix your flour and butter together and add them to the milk as you heat it in a saucepan, stir continuously as it thickens add your cheese keep stirring.

I love to chop fresh Parsley and mix it into the sauce just before it is ready.

Finally make a bed of boiled rice or noodles add your fish and top with the cheese sauce.

What to drink with fish

Lemon juice drinks are ideal to accompany a fish meal. There are a number of wines that have quite a citrus taste to them, experiment until you find your favourite.

I always think that black tea goes well with any fish meal espescially the oilier fish.

      Hi, Tony

      Sounds absolutely delicious. Seafood dishes are very close to my heart. I used to spend most of my summers as a young boy at my aunt's cottage in Argyll, near Oban. I spent all day, every day, fishing, getting to know the seafood and talking to any of the fishermen who would listen. I have remained a sea fisherman and seafood fanatic to this day.

      Thanks for sharing that. I saw 'three men in a boat' on TV from Oban, it looked idyllic. I've always enjoyed sea fishing, but I learned my fish cooking because we had a greengrocers and fish merchants when i was young

      you say the nicest things. I have a local fishmonger who makes up boxes of off-cuts which can be anything. So the dish can be a bit of a surprise as to content.

      Tony, What a dream recipe for environmentalists! In particular, I like the aroma and look which I imagine for such a potpourri of seafood. Also, I really like the paprika and white pepper which you include among the ingredients.

      Derdriu, I love fish, and my local fish wholesaler or should that be wholesailor? has a really great freshdaily counter filled with fishy delights. they get there fish from Grimsby on the Yorkshire coast, or Devon which has a fantastic amount of less common fish, like John Dory, and yellow snapper as well as live lobsters and crabs. Line caught rather than trawled fish are also available.
