All Pound Cakes Are Not The Same.

I enjoy trying different pound cake recipes, and here is a really good one to try. This one is made with cream cheese, and it is a very moist cake. I used a bundt pan to make in. You can't really make it in a loaf pan, as it makes a lot of batter. This pound cake can serve at least 16. Pound cakes are a simple, yet a very satisfying dessert. There are also nice, if someone drops in for coffee, and you have one made already. You can offer them a piece with their coffee. A nice and simple little treat. This is also a good dessert to bring to even a pot luck dinner, or bake sale, and similar events.

Ingredients Needed:

** 1- 1/2 cups of better, softened

** 3 cups of sugar

** 1 package of cream cheese, 8oz, softened

** 6 eggs

** 2 teaspoons of vanilla extract ( or almond extract )

** 3 cups of all purpose flour

** 1/4 of teaspoon salt

** 1/2 of teaspoon baking powder


Preheat the oven to 325 degrees

Prepare your baking pan , greasing well and dusting with a bit of flour.

In a large bowl combine the butter, cream cheese and sugar. Cream together with the electric mixer until light and fluffy.

Next add the eggs, one at a time, mixing ti well blended, then add the vanilla extract, and blend in.

Next you add the salt, baking powder and the flour, mix until well blended. Pour into the prepared baking pan.

Bake in the pre heated 325 oven for 1-1/4 to 1 1/2 hours. Though I found with my oven at work I had to bake it a little longer. Mine took two hours to bake. Check for doneness with a toothpick. I would suggest checking it after 1 -1/4 hour, and each 15 minutes after that. When the pound cake is done, cool before removing it from the pan. Don't forget to add some cool toppings. I love mine, with sweetened strawberries, and homemade whipped topping. Or sometimes with just some "real butter" spread on it.

Other Toppings:

** Fresh Blueberries

** Canned Peaches, drained of the juice

** Strawberries

** Blackberries and raspberries

** Powdered sugar, for dusting the top of the cake

All the berries can be topped with homemade whip topping, or store bought cool whip. Also you can cook your fruit down a bit on the stove, with a touch of sugar and cornstarch. This will produce a fruit sauce. You could even add fruit into your pound cake if you wanted to. Kids really go for pound cake with ice cream on top! Why not wrap them up a piece, and pack it in their lunch box, so they can enjoy a sweet treat at lunch. So whip up a pound cake and enjoy it with a meal today. Well that's it for now.
