Mom's Classic Banana Cake Recipe

I was fortunate enough to grow up in a family that loves to eat. Our Mother was an excellent cook who was taught at an early age by her own mother how to cook wonderful home recipes. My Mother always found time to bake the most amazing desserts that I still love to this day. One in particular that I grew up to love is my mom's rendition of the classic banana cake. I was never that fond of bananas but when she made banana cake I was always the first to want a piece. I have provided the recipe below for you to try out for yourselves. I hope you enjoy this fantastic cake!

What ingredients do I need?

1/2 cup of softened butter

1 1/2 cup of sugar

2 eggs

1 cup of sour cream

1 teaspoon of vanilla extract

2 cups of flour

1 teaspoon of baking soda

1/4 teaspoon of salt

1 cup of mashed bananas

Cream Cheese Frosting

1 - 8 oz package of softened cream cheese

1/2 cup of melted butter

2 teaspoons of vanilla extract

2 cups of powdered sugar


1 Preheat oven to 350 degrees fahrenheit

2 Grease a large cake pan

3 In a small cooking bowl mash 1 cup of bananas

4 In a medium cooking bowl mix together 2 cups of flour, 1 teaspoon of baking soda, 1/4 teaspoon of salt

5 In a large cooking bowl mix together butter, sugar, eggs, sour cream, and vanilla extract until creamy

6 Combine dry ingredients form medium cooking bowl into wet creamy mixture

7 Stir in bananas into large cooking bowl until it forms batter like substance

8 Pour batter into large cake-pan and bake for about 1 hour

9 Make sure to cook thoroughly testing with toothpick to make sure the toothpick come out clean

10 Remove from oven and place in refrigerator, this will help with keeping cake moist

11 While cake is cooking, mix together 1 - 8 oz package of softened cream cheese, 1/2 of butter, 2 teaspoons of vanilla extract, and 2 cups of powdered sugar in a medium mixing bowl. This will form your cream cheese frosting

12 Spread the cream cheese frosting onto the cooled cake

13 Place back into refrigerator until ready to serve

      O, here comes my sweet tooth!! When I was a young girl, my best friend's Daddy would make a banana cake about once a month. It was divine. I have not had one since.
