Mom's Vegetarian Meat Balls

Updated on March 7, 2013

Mom's Vegetarian Meat Balls were in high demand at our church's monthly potluck. Her large pan always went home empty and often the first entree to be cleaned out. Here's the recipe. It's my favorite vegetarian dish.

2 1/3 cups of cracker crumbs

1 (8 oz) pkg. cream cheese

1 tablespoon chicken flavoring

3 eggys

1 cup walnuts

1 large onion

Flavor with 1 tablespoon soy sauce and about 1/8 tsp. of several of the following: sage, Italian seasoning, thyme, oregano, or parsley. No salt needed if using salted crackers. 3/4 tsp. salt if using unsalted crackers.

Make cracker crumbs with your food processor or blender. Do the same with the walnuts. Add all dry ingredients into a mixing bowl.

Place cream cheese, chopped onion, eggs and soy sauce into a food processor or blender and mix until well blended. Add dry ingredients and mix thoroughly.

Form into balls about 1 1/2 inches in diameter. Rolling balls in a bit of flour makes it easier to handle them. Place in pan. A two inch high pan is ideal.

Add vegetarian gravy which will distribute evenly inside of pan. (For Vegetarian Gravy - click link below.)

Bake in oven at 375 degrees for 45 to 60 minutes.

May be frozen and baked at a later date.

Serve it up!

Serve with mashed potatoes, corn or peas, beets, and potatoe stuffing. Top it off with gravy and cranberry sauce. A meal fit for a king! Enjoy.

Pictures will be added next time we prepare this scrumptious meal.
