My Ashley Judd Mistake. Her Recipe For Biscuits. My Recipe For Easy Drop Biscuits.
My Ashley Judd Biscuits
I saw Ashley Judd on Rachael Ray making her homemade biscuits. She's a southern lady who cooks southern style. I love biscuits and I’m from the south but never make homemade unless I make the drop homemade biscuits. I made a big mistake trying to make Ashley Judd's biscuits.
Ashley made it look so easy so I thought I would try. Well, they didn't give the recipe or tell what kind of flour to use. So I thought if there’s no baking powder it must be self-rising flour. I put together a batch just like Ashley did using my self-rising flour.
I baked them in a 425° oven for about 20 minutes and then sat down at my kitchen table looking forward to biscuits and honey. The honey I bought while down south. Took one bite of the biscuit and knew I couldn't stand them. They didn't rise very high and they were so dry. So I guess I made a mistake with the recipe.

Ashley Judd's Southern Cooking
I called my 90-year-old Southern mother and ask her what I did wrong. She never measured either and she no longer makes her own, but she told me how I should do it.
She said: About:
2 cups of flour
1 ½ cups of milk
Shortening is done just like Ashley right out of the can
Dash of salt
1 tsp of baking powder
Do not knead long will make biscuits tough.
In her cooking days, they used the grease from the grease can and they put some of the grease in the pan and melted it. Mother always used a round cake pan or pie pan for her biscuits; she slopped the biscuits on both sides in the grease, laid them around in the pan then baked. She said about a 400° oven and she also told me if it’s buttermilk biscuits add baking soda with it, no cream of tarter with either recipe. So when I do it again I will try it my mother's way. I've never made biscuits her way I always make the drop biscuits which my grandkids and kids love.
Please vote on my drop biscuits.
My Easy Drop Biscuit Recipe
2 cups of sifted all-purpose flour
3 teaspoons baking powder
½ teaspoon of salt
¼ cup shortening.
1 cup milk
Cut shortening into dry ingredients till coarse crumbs. Make a well: add milk all at once Stir quickly with a fork till dough is mixed and follows fork around the bowl.
Drop from teaspoon onto greased cookie sheet. 450° oven for 12 to 15 minutes. The biscuits can be as big or as small as you want. I tend to make larger ones using a tablespoon.
You can make a batch of drop biscuits use in the Apple-Cherry Crumble below.
The Biscuits I Made.
This is a picture of the leftover dough biscuits. I didn't get a picture of the bigger biscuits I made. Just to give you an idea of what they looked like.
Ashley is a lovely lady. Her biscuits looked great. I'm just the goof who can't make them. Do you think she ever made the biscuits or did the staff do it for her? You notice they didn't cook hers. You know I don't think Ashley Judd has made a biscuit in her life. Her mother I'm sure has.
Apple Cherry Crumble
Now I had all of those biscuits, what to do with them? Well, my husband has been asking me to make something sweet to eat. So I had some apples I needed to use up.
I peeled my apples added them to a pan on the stove with ¼ cup butter
½ cup sugar and cinnamon as much as you like.
Cook on medium until apples are tender.
Take the biscuits that were so bad crumble them up add ¼ cup of melted butter to them ½ cup of sugar and as much cinnamon as you like crumble altogether. .
After the apples are cooked I added a can of Cherry pie filling to them and cooked the apple mixture a little longer, about 10 minutes. Pour the whole mixture into an 8 x 8 sprayed pan. Crumble biscuit mixture over top. Place in 400° oven for 20 minutes.
Serve with ice cream or whip cream.
Now this was made with Ashley's bad biscuits and it will be even better with your good biscuits. I added one of the small leftover biscuits to my bowl.
This is kind of like an apple cherry crumble dessert.
