My Blueberry Pie
Enjoy Summer Eating
Here's a recipe for blueberry pie that is so easy, you can't go wrong! Just select the finest berries summer can deliver and get cooking.
I usually use three cups of fresh blueberries. You can substitute mullberries, raspberries or other.
I stir in 3/4 cup of honey and place in a bowl set aside.
Cover the counter at home with a large sheet of wax paper. Oil well.
Pile two cups of organic whole wheat flour or other on the wax paper and make a hole in the center of the pile. Fill the center gradually with the oil.
Now mix 3/4 cup of flax seed or grape seed oil, or melted butter into the center of the flour. Kneed well folding in the sides over and over. Roll out the flour flat.
Place rolled pie crust over an oiled pie pan. Do not trim edges.
Fill the pie crust with the berry and honey mixture.
Fold the over lapping sides over the berries.
Bake at 350 degrees for 35 minutes.
Let cool one half hour before eating.
Serve with vanilla tofu ice cream.
Now sit back and relax at the picnic table with the kids!
