Grandma Vicky's Famous Graham Cracker Cake
This recipe is my grandmother's famous Graham Cracker Cake. Another one of my family's favorites. This particular cake is my father's all time favorite of his mothers' recipes. It's perfect for children to me because its not too sweet. That's one of the many reasons my father enjoyed it so much. I hope you will too.
My grandmother no longer bakes anymore due to her age and illnesses but her recipes will go on in my family's kitchen and now maybe yours. I hope you guys really enjoy this one.
Graham Cracker Cake
- Preheat oven to 375 degrees
- For 2 8-inch pans only; for 9x13 pan, use 1 ½ times recipe
- line the bottom of pan(s) with wax paper
Ingredients:
- ½ cup shortening (Crisco or Spry)
- 1 cup granulated sugar
- 3 eggs
- 1 cup milk
- 2 tsps baking powder
- 24 graham crackers (plain)
- 1 cup ground walnuts
- ½ tsp salt
Separate eggs; beat whites till stiff; beat yolks; set aside
Cream shortening and sugar; add yolks, then milk
Add crackers (rolled fine with baking powder)
Add nuts (with salt); Fold in egg whites
Bake 375 degrees; check after 25 minutes; toothpick comes out clean when done
Cake will drop as it cools
Icing:
Use butter or cream cheese icing...
For 1 recipe use:
- 4 oz cream cheese
- 1 tsp vanilla
- 2 tbls sour cream or milk; beat well
- Add confectioners sugar just to spreading consistency
- Garnish will ground nuts
