My Mother Jean's Zucchini Casserole
Hi Gardening Friends
Here is another one of our family favorites. My Mother's Zucchini Casserole.
3 Carrots Peeled + Sliced
3 Small Zucchini sliced (SKIN ON)
1 Medium Onion Chopped
8 OZ Cheddar Cheese Grated (White)
1-10 OZ Cream of Chicken Soup
1 box Stove Top Chicken Flavored Stuffing Mix
1 Stick Butter - 1 Cup Celery Chopped
Boiling Water - Unsalted 5 minutes then add
Cook Carrots + Zucchini about 15 minutes an drain
Melt 3/4 stick Butter in large Pan or Skillet
Add Onions + Saute,
Add 1/2 Pkg Stuffing Mix + 1/2 Pkg og Flavoring Mix
Add Can of Soup and Sour Cream.
Stir and Add Squash + Carrots.
Pour into Greased Casserole.
Sprinkle cheese on top then mix together.
Melt 1/4 stick Butter + Add remaining Stuffing and Flavoring
Mix + Sprinkle on top of Casserole.
Bake at 350* for 35 - 40 minutes.
If using glass watch carefully.
Can freeze- thaw in refrigerator day before baking.
