  • 1 Onion, peeled and chopped.
  • 1 1/2 lbs of lean ground beef.
  • 1 1/2 cups of cooked rice.

  • Fresh ground or cracked black pepper.

  • 1 Clove of fresh garlic.

  • 1lb of shredded cheese of your choice.

  • 1 lb thin sliced bacon.

  • 1 small can of tomato sauce.

  • 1/8 cup A1 sauce.
  • 1/8 cup Worcestershire Sauce

Prepping Pretty Peppers

Bring a large pot of water to a boil over high heat. cut peppers in 1/2 from top to bottom. Remove seeds and white webbing inside the pepper. Then add peppers to the boiling water, keep peppers completely submerged until their flesh is slightly softened, Drain and set aside to cool For handling.

Suffing and Cooking Your Peppers

In a large skillet over medium heat. Add onions and cook, stirring often, until soft and translucent, approx.3 minutes. Add garlic to the onions and let stand. In another pot steam rice or boil rice to a blanched state, about half cooked and remove rice. Remove skillet from heat, add meat, rice, tomatoes, and seasonings. Mix all ingredients well. Arrange the cut side of the peppers up in a cookie sheet, then stuff peppers with filling. Now its time to add the bacon and cheese over the stuffed peppers. First cover the stuffing with a strip of bacon. Then cover the bacon with your favorite shredded cheese. Pre heat oven to 350 Deg. Place in oven and bake for 40-50 minutes (or longer, depending on how big the peppers are that you are stuffing), until the internal temperature of the stuffed peppers is 160 Deg.

Oh, I really like this recipe. I like how you cut the peppers in half. I usually just cut the top off and then stuff them, but your way is better. I love the bacon and cheese combination. I'm definitely trying this recipe. Way good!

Loving the whole teaspoon of Tabasco. This is right up my alley. I make a similar stuffed pepper recipe, but this one looks like a great twist to the old trusty original. Definitely going to try this one!

My mom made these all the time when I was really young - this Hub makes me a little home sick :) I was already heading to the store tomorrow so Im going to add the ingredients to my list.

      Hi ,

Looks very interesting recipe but since we don't eat beef so can we replace beef with goat or lamb?

Thank you and you can make any variation you like just remember to cook the pepper long eanough to make them soft and not ruin your new creation.
