There are lots of recipes in making oatmeal cookies and all of which has different variations. After a while of testing those recipes, I have decided to make a variation of my own. I have noted that the use of different brands of oatmeal does matter. When I used the Quaker brand, the result is just a plain cookie with the feel of some fiber oats in the mouth once eaten. I did try the Australia Harvest Oats and it gives off a bit chewy cookie, which my clients and kids liked the most.

Here is my recipe:

1 cup margarine or butter

2 pcs eggs, lightly beaten

1 cup brown sugar

1/2 cup refined sugar

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 tsp vanilla

1/2 cup sour milk

1/2 tsp cinnamon powder (optional)

2 cups flour

1/2 cup cocoa powder

1 tbsp oil

3 cups instant oatmeal

1. Mix together margarine, sugar and salt in a large bowl until it looks pale.Put in the vanilla then the beaten eggs.

2. Add in shifted flour, baking powder, baking soda, cocoa powder and cinnamon. Blend until all ingredients are mixed.

3. Pour in sour milk, then add the oatmeal and mix.

4. While preheating the oven, prepare the baking pans by greasing it with oil.

5. Scoop half a tablespoon (for every piece of cookie) from the mixture then put it on the greased tray.

6. Bake it for 8-10 minutes.
