  • 2 Cups Gram Flour (Besan)
  • 4 Cups Sugar
  • 3 Cups Ghee (Clarified Butter)
  • 3 Cups Water

  1. Take 2 cups of Gram Flour (Besan) in a fry pan and heat the same until it turns in to light brown colour and with a great aroma of roasted gram flour
  2. Keep stirring the same to make it dry and lump free. If required sieve the contenet. Keep this fried flour aside
  3. Heat the Ghee (clarified butter) and keep it ready for cooking
  4. Grease a tray with ghee and keep it aside
  5. Add 2 cups of sugar and water to a pan and heat the same until the sugar gets dissolved
  6. Increase the heat and bring the sugar syrup to boil. Cook the same for 5 min or until the syrup reaches to single thread
  7. Add half of cup of hot clarified butter (Ghee) to this syrup and stir. Add the fried gram flour and stir continuously preventing the lump formation. Keep stirring the same until the mixture starts boiling with bubbles
  8. Add half more cup of ghee (clarified butter) and keep stirring, after 1 minute add half more cup of ghee and keep stirring further and continue the same with remaining ghee. You can observe the foam sizzles up everytime you add hot ghee.
  9. Continue stirring until you get the sweet and tempting aroma of roasted gram flour
  10. Pour this mix on the greased tray/plate and press it to spread evenly. Let it cool for sometime and then cut it in to desired shapes & sizes.

Chef's Tips

  • After pouring the content on greased plate sprinkle some sugar & safron on it
  • Store the Mysore pak in an airtight container so that the freshness will last for 4 - 5 Days
