OMG Roasted Chicken

What You Will Need

Main Dish

  • 4 lb whole chicken
  • 1/2 cup white wine
  • 1 cup soy sauce
  • 1/3 cup olive oil
  • 6 garlic cloves peeled
  • 1/2 tablespoon paprika
  • 3 sprigs of rosemary
  • 1/2 portugese sausage sliced thick


Preheat your oven to 350 degrees making sure that your oven rack is placed in the middle slot of your oven and do your prep work as you wait for your oven to be just right.

Start off by thoroughly washing your chicken under some warm water and then pat dry with clean paper towel. Add your olive oil to the bottom of the roasting pan and place your chicken in the pan. Pour your wet ingredients, except the olive oil since you already put it in the pan, into a bowl and whisk together. Place your salt, pepper and paprika is a small bowl and mix together with a fork. Pour your soy sauce and white over the chicken and then sprinkle your dry mixture onto the front and back of the chicken.

Once you've placed the chicken back in the pan, stuff it with 2 cloves of garlic, 4 pieces of chorizo and a sprig of rosemary. Place the remaining garlic cloves, chorizo and rosemary around your chicken, Now it is ready for the oven.

Cook your chicken on its back for 1 hour, basting once in between at about 30 minutes into cooking and then flip with long tongs and let cook for another hour. Flip the chicken back to its original position and let cook for another 15 minutes to ensure nice crispy skin.
