Oatmeal Muffins Delight
For the love of the muffin
I like to make a batch of these muffins on the weekend. One, I have plenty of time to make them without feeling rushed. Two, if I tried to make these on a weekday, I would have to get up really early in the morning because, I have to be at work earlier than most people who work at a doctor's office. After you start preparing to fix the muffins, you will realize that this recipe makes several muffins at a time so, it is good to make them on the weekend so that they have time to cool. Then, they can be oh Then they can be packed up easily and taken to work on Monday for your co-workers or eat on them all weekend (or both)!
This particular recipe makes a great grab and go item for those hurried mornings. You know the ones, where you are searching for the car keys to find out that you have left them in the front door. Now, you have set your purse down and you don't know where you left it. It's these chaotic mornings when you are glad that you have some good comfort food.
On the other hand, if you have a nice morning, you might have time to make coffee and warm up the muffin and really enjoy it.
These muffins make a lot so, for each recipe there are several muffins that can be made from each batch.

Simply The Best
Whether you bake a lot or just a little, you should have most of these ingredients on hand for this recipe. If you are like me, the less you have to buy at the grocery store the better. Sometimes, I might just try a new recipe at home because I have all of the ingredients at home already. This has determined several times whether I make a new recipe or not. That's what I like about this particular one. I kind of think of it as a small victory if I am tight with money and have enough to make these because they are very cheap to make.
They may take a few minutes to mix up but, they are really simple to make.The only ingredient that I typically might not have on hand is the buttermilk. The other ingredients that are found in these muffins, are all simple things, as well as inexpensive.
It would be a good idea to use the largest mixer that you have to handle this job. I would use the largest mixing bowl as well. It is aggravating to get everything mixed up and the bowl not be big enough. I can't tell you how many times this has happened. This recipe does make a large batch of muffins.The oatmeal requires a more sturdy mixer. Just keep plenty of liquid in the mixture and you will be fine.

These muffins make a lot of muffins. You can make miniature muffins or the larger ones depending on the occasion or event that you are making them for.
Oatmeal muffins are great to take to work, just as a treat for your co-workers This year at the office we brought breakfast/brunch food for our Christmas party. If you want to you could just do 1/2 the recipe or you can also make the amount that the recipe calls for and freeze what you don't cook.
How To Make Oatmeal Apple Muffins
- 2 cups all purpose flour
- 2 cups cooking oats, quick cooking, uncooked
- 1 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 2 eggs
- 2 cups buttermilk
- 2/3 cup shortening, melted
- 1/2-1 cup raisins, enough to mix in muffins (optional)
Raisins are Healthy and Delicious
- Combine all of the dry ingredients and then the raisins in a large bowl and mix it well.
- Stir together the eggs, buttermilk and shortening.
- Now, you want to add the wet ingredient mixture to the dry mixture, stirring the ingredients (once again,) in a large bowl, stirring just until moistened.
- Spoon the muffins into a greased muffin pan either large or small muffins or you can use muffin cups.
- Bake at 400 for 18-20 minutes. This recipe makes 1 1/2-2 dozen muffins.

Oatmeal muffins are quite filling and they are made from oatmeal. This is the stick to your ribs kind of food that makes for a great breakfast food.
By purchasing different muffin cups, you could take these and make them a little more special. They could be brought to all the holiday functions whether at work, church or family gatherings. There are so many different designs now, for muffin cups, that you can find one for each occasion. It does seem to brighten someone's day when you have either a design on the muffin cup versus having just the plain pastel colors that we are used to or the aluminum outsides that the muffins are cooked in.
If you wanted of course, you can forgo the muffin cups altogether and just use a muffin pan.
My mom really takes the time to cook and I can remember my mom making muffins and taking them to work. She was always making food and taking it to share with he co-workers. She would carefully take them out of the cups that they were cooked in and she have this basket and red checkered cloth that she would line the basket with and then she would carefully place the muffins in the basket. They would still be warm when she took them to work. She would take some butter with her and if the muffins needed to be warmed again, her co-workers could add some butter.
I know that they loved to see her coming with her basket. It was always something homemade and wonderful.
