Oatmeal Puffs Recipe

Updated on October 12, 2012

Yummy Oatmeal Puffs

This is a really great recipe that I came across by chance and decided to try it. Let me tell you, these little treats are perfect for breakfast, snack or desert and are easy to make and low fat. So, if you have a child that won't eat oatmeal (like my daughter) or know someone that is on a cholesterol restrictive diet, or your yourself are on a diet, this will definitely be the recipe for you. Best thing is that these puffs can be made in advance and stored in the freezer once cooled.

1 cup Oats (old fashioned or quick, it doesn't matter)

1/2 tsp ground cinnamon

1/2 cup of fresh fruit of your choice

1 1/2 o.z. raisins/craisins (optional)

4 egg whites

1/4 cup skim milk

3 tbs. sugar/ 4 packets of artificial sweetner

low fat spray for cooking

In a bowl, combine the oats, cinnamon, fruit, egg whites and milk. Leave this mixture to tand for 10 minutes as this gives the oats time to absorb all of the liquid.

Lightly coat the frying pan with the low fat spray and cook tablespoon portions of the mixture over a low to medium heat until they are golden brown on each side. Ensure that they are thoroughly cooked through.

Serve warm.

This recipe makes 12 tablespoon portions.

Serving size: 2 puffs
