One Cup Southern Breakfast

Updated on April 30, 2011

This Is Quick And Easy

Scrumptious And Quickly Done

Many times you don't have time for a leisurely breakfast as you try to get out the door. This southern favorite, at least in my family, has been passed along for a few generations and takes about 5 minutes in total preparation time. It's a complete breakfast in a coffee cup.

Ingredients per person:

2 raw eggs

2 slices of bacon

1 slice of toast

Salt and pepper

Fry (I prefer microwaved) your bacon until throughly done and crisp. At the same time, bring a pot of water to a boil an then add the two eggs and boil for 4 minutes and no longer than that. Your toast can also be toasting while doing the first two steps.

Chunk your toast into pieces in a coffee cup, then crumble your bacon on top of the toast and finally add the two soft boiled eggs. Salt and pepper to taste, stir throughly to mix the ingredients and in about 5 minutes you have a fantastic, tasty, nutritious breakfast.

Enjoy!

      Frog Prince:

I'm a bit confused. Isn't this Breakfast Pop's hub to start with a breakfast and then move on to some political issue? I've read some of your hubs, and you do not need to take Breakfast Pop's breakfast recipes to make your point.

Sounds wonderful, Frog. Too bad I just finished my cream cheese lox and tomato on a bagel! There is always tomorrow! Enjoy the day.
