Oscar's Banana Bread Recipe

With many exciting adventures while growing up in America, the author relates some of those experiences, Sharing is important!

The following is a delicious, nutritional version of banana bread using well aged bananas and adding other ingredients with tender loving care:


Approx: 55 Minutes Cooktime, (less if in high altitude)

Makes 8-12 servings


1/2 cup butter

3/4 cup sugar

2 eggs

4 ripe mashed banana's

1-3/4 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon vanilla

1/2 cup crushed walnuts or pecans if desired

Instructions to Make the Batter:

-mix together the butter and sugar

-add the eggs and smashed bananas

-sift together flour, soda, and salt

-add to blended mixture and add vanilla flavoring

-add crushed walnuts if desired at this point, stir into batter

-grease bottom and lower edges of 2 each 5x9 bake pans; then pour in fairly thin batter, leaving it low in both pans as loaves will raise up about 3-4 inches if done properly

-bake at 350 degrees for 55 minutes (preheated oven)

-remove from oven when done; top should be rounded and nicely browned


-Wrap in plastic and let sit overnight to cool and reach room temperature

-Cut banana bread into even slices the next morning.

-Serve for breakfast, or at your brunch gathering

-Stays moist and flavorful in refrigerator

-This recipe is a result of my original and improved techniques combined into one



Banana Bread comes in many different packages, shapes, and flavors. It originates from many different cultures and baking viewpoints. For instance in the old country it might be made using goats milk and or stone ground flour. Different styles of baking are common and expected. Do you roll yours out like bread dough? Or do you throw all the ingredients into a bread maker and say Voila! while you are hitting the start switch? hmm.. Interesting!
