PAPDI DAHI CHAAT RECIPE

Fried white flour crispies topped with yoghurt, boiled potatoes, chutneys and dry spices.

INGREDIENTS FOR THE PAPDI

  • 1 cup All purpose flower (plane flour)
  • 1/4 cup Semolina
  • Sunflower oil, for frying
  • pinch of Carom seeds
  • salt to taste
  • INGREDIENTS FOR THE TOPPING:
  • 2 Medium sized potatoes, (boiled and chopped)
  • 1/2 cup yoghurt
  • salt to taste
  • 1/2 tsp Red chilli powder
  • 1 tsp Cumin powder
  • 2 tbsp Coriander chutney
  • 2 tbsp Tamarind chutney
  • chopped fresh coriander, (for garnishing)

INSTRUCTIONS

  1. In a large bowl add flour, semolina, 2 tbsp oil, salt to taste and carom seeds. Now slowly add water and make a dough.(not very soft). Cover the dough and leave it for 15-20 mins.
  2. Divide the dough into three parts. And roll out the each parts of the dough into a big sized thin roti and cut it into diamond shapes.
  3. Heat oil in a deep pan and fry them on medium heat until it is golden brown. Remove onto an absorbent paper.
  4. NOTE: The Papdi can be stored in airtight container for a month if you wish to use it later.
  5. FOR THE PAPDI CHAAT:
  6. Arrange the fried papdi on a serving plate. Layer the papdi with the potatoes, yoghurt, coriander chutney, tamarind chutney, salt, red chilli powder and cumin powder.
  7. Garnish with fresh chopped coriander and serve immediately.

Prep time: 15 min
Cook time: 30 min
Ready in: 45 min
Yields: Serves 5-6 people
