Paneer is an abundant source of proteins in milk.The main ingredient of Paneer is milk that has been strained and curdled.It's origin is in South Asia and middle East.

How to make Paneer

Full cream milk: 1kg

Phitkari(alum): 1/2 tsp

or

Vinegar: 1 tbsp

or

Lemon Juice: 1 tbsp


Method:


1. Boil milk.

2. When boiling,add 1 of the three(phitkari (alum) or vinegar or lemon juice).

3. When water completely separates from cottage cheese remove from heat and drain.

4. Keep the cottage cheese in paneer maker and press or keep the paneer in muslin cloth to drain the excess water and over it keep some heavy weight.

5. Paneer will set in 1 hour.

Ingredients

  • 200g Paneer
  • 1 onion
  • 2 whole red chillies
  • 1 tsp green coriander
  • 1/2 tsp cumin
  • 1 tsp ginger
  • 1 tsp garlic
  • 1 ground tomato
  • 1 tsp cream
  • 1 green bell pepper
  • 2 tbsp oil
  • 1 tsp garam masala
  • salt to taste

Method:

  1. Dry roast whole coriander,cumin,whole red chillies and grind coarsely.
  2. Heat oil in a pan.
  3. Add onion cut in fine square pieces.
  4. When the onion turns soft,add coarsely ground ginger and coarsely ground garlic to it.Saute for 1 minute.
  5. Add coarsely grinded masala (seasoning) and grinded tomato to it. Saute for 2 minutes.
  6. Sprinkle garam masala powder on top and stir.
  7. Add cream & saute until the oil separates.
  8. Then add shallow fried paneer and shallow fried green bell pepper.
  9. Close the lid & stir.
  10. Garnish with green coriander and cream.

Snacks:

1. Paneer Tikka


Paneer: 200g

oregano: 1/2 tsp

whole red chilli: 2

ginger paste: 1 tsp

garlic paste: 1 tsp

salt to taste

lemon: 1/2

turmeric: 1/2 tsp

red chilli powder: 1/4 tsp

strained yogurt: 2 tsp

refined oil: 1 tsp

cream: 2 tsp

grated cheese: 1/2 cube


Method:


1. Cut paneer in square pieces.

2. Dry roast whole red chillies and oregano and grind.

3. Marinate paneer. You will have to marinate paneer twice in this recipe.

Marination:

1/2 tsp ginger garlic paste

lemon

turmeric

red chilli

salt


4. Wrap paneer pieces with marination for 1/2 an hour.

5. Remove excess water from paneer.

6. Now mix ginger garlic paste,salt,turmeric,oregano,red chilli powder,fresh cream and grated cheese in yogurt.

7. Then wrap paneer cubes in yogurt mixture.

8. Skewer the tikka,one inch apart or grill in non stick pan.

9. Garnish with chat masala,lemon juice and green coriander.


2. Paneer Kebab

grated paneer: 1 cup

cornflour: 1 tsp

bread crumbs: 2 tsp

bread slice: 1

green chillies: 1 tsp

lemon juice: 1/2 tsp

salt to taste

green chutney or chilli sauce


Method:


1. Except oil and breadcrumbs,mix all the ingredients.

2. Make balls.Press lighltly.

3. Wrap in breadcrumbs and shallow fry.

4. Serve with green chutney or chilli sauce.

3. Paneer Saucy Layered

1. Cut paneer into big square pieces.

2. Make a slit in the middle of paneer pieces.

3. Spread green chutney or green chilli sauce in middle.Press lightly.

4. Garnish with red chilli powder and salt.

Paneer Pakoda

Paneer 100 gm

1)Cut paneer into 21/2 inch pieces.

2)Make Batter.

Batter:

Gram flour(besan) 4tbsp

Salt to taste

Red chilli powder 2 pinch

Turmeric 1/4 tsp

Oregano seeds 1/4 tsp

Make thick batter.


3)Add oil to pan.Let it become hot.

4)Dip paneer in batter and deep fry.

5) Sprinkle chaat masala.Serve hot with tomato sauce.



4. Paneer Fingers

grated paneer: 1 cup

finely chopped spring onion: 1

green chillies: 1 tsp

green bell pepper chopped in square pieces: 1 tsp

salt to taste

black pepper powder: 1 pinch

tomato sauce: 1 tsp

cheese cubes: 2


Method:

1. Mix sring onion,green chillies,green bell pepper,salt,black pepper powder in grated paneer.

2. Fry bread slice on one side.

3. Layer cheese,tomato sauce and paneer mixture on unfried side.

4.Layer grated cheese again on top of this layer.

5. Bake for 10 minutes.

6. Cut it in finger shape and serve.

1. Paneer Stir Fry

Paneer: 100g

green bell pepper: 1

tomatoes: 1

onion: 1

turmeric powder: 1/2 tsp

cumin: 1/2 tsp

garam masala: 1/2 tsp

chat masala:1 tsp

green chillies: 1 tsp

oil: 2 tbsp

green coriander: 2 tsp


Method:

1. Cut paneer in cubes. Cut green bell pepper,tomatoes,onion inthin and long pieces. Cut green chillies in thin and long pieces.

2. Add oil to pan.

3. Add cumin,chopped green chillies,turmeric powder and saute.

4. Fry paneer till golden in color.

5. Add onion,green bell pepper,salt and mix.Cook for 2 minutes at low heat.

6. When onions turn soft,add tomatoes.

7. Cover with lid for 2 minutes.

8. Remove from heat.

9. Add garam masala and chat masala.

10. Garnish with green coriander and serve.


Palak Paneer(Spinach Cottage Cheese)

2. Palak Paneer (Spinach Cottage Cheese)

Spinach: 250 g

Paneer: 200 g

tomato puree: 1 tbsp

oil: for frying

turmeric powder: 1/2 tsp

coriander powder: 3 tsp

red chilli powder: 1/2 tsp

garam masala powder: 1/2 tsp

salt to taste

chopped onion: 1

ginger paste: 1/2 tsp

garlic paste: 1 tsp

cream: 1/2 cup

Method:

1. Blanch spinach leaves.Keep them in cold water then grind in mixie.Keep it aside.

2. Add oil to pan.Shallow fry paneer till light pink in color.

3. Heat 2 tbsp oil.

4. Add chopped onion.When pink in color,add ginger garlic paste.Saute for 1 or 2 times.

5. Add turmeric powder,coriander powder,red chilli powder.

6. Add 1/2 cup water and fry till oil separates.

7. Add tomato puree.Saute for 1 minute.

8.Add 1/2 cup cream.Fry for 2 minutes.

9. Add spinach puree and stir.Cook for 3 or 4 minutes.

10. Garnish with garam masala powder and green coriander and serve.

3. Shahi Paneer

Paneer shallow fried: 250 g

poppy seeds paste: 2 tsp

ginger paste: 1 tsp

green chilli paste: 1/2 tsp

almond paste: 1 tsp

cumin powder: 1/2 tsp

turmeric powder: 1/2 tsp

coriander powder: 1 tsp

red chilli powder:1/4 tsp

tomato paste: 1 tbsp

onion paste: 2 tsp

milk: 1/2 cup

cream: 1/2 cup

oil: 2 tbsp

chopped green coriander: 1 tbsp

Method:

1. Add onion paste,green chilli paste,almond paste,tomato paste,poppy seed paste,ginger paste to oil and fry.

2. Add coriander powder,turmeric powder,red chilli powder.

3. Add some water.Saute.

4. Add 1 cup milk.

5. Now add shallow fried paneer.Cook for 5 minutes over low heat.

6. Remove from heat.Garnish with cream and green coriander and serve.

4. Badami (Almond) Paneer

Paneer: 200 g

ginger paste: 1 tsp

onion paste: 1 tsp

cashewnut paste: 2 tsp

almond paste: 2 tsp

groundnut paste:2 tsp

cumin: 1/2 tsp

turmeric powder: 1/4 tsp

oil: 1 tbsp

salt to taste

Method:

1. Shallow fry paneer.

2. Prepare ginger,onion paste.

3. Prepare cashewnut,almond,groundnut paste.

4. Add oil in pan.

5. Add ginger onion paste to it. Fry.

6. Add cashewnut,almond,groundnut paste.

7.Add turmeric powder,salt,red chilli powder and saute.

8. Add some water.

9. When it starts changing color add paneer.

10. Cook at low heat for 2 minutes and serve.

5. Achari Paneer (Pickle Paneer)

strained yogurt: 1 cup

Paneer: 1 cup

salt to taste

turmeric powder: 1/4 tsp

paste of mixed pickle

black onion seeds:1/4 tsp

whole coriander: 1 tsp

fenugreek(roasted and coarsely ground): 1/2 tsp

fennel: 1 tsp

asafoetida: 1 pinch


Method:

1. Roast black onion seeds,whole coriander, fenugreek,fennel,asafoetida and grind coarsely.

2. Take 1 tbsp oil in pan.

3. Add paneer.

4. Add masala(seasoning).Saute for 2-3 minutes and serve.
