Pesto Recipes

Pesto recipes are so easy to make and very versatile, and you can try a variety of different ingredients and spices for variety. Use whatever oil you have on hand, different greens, different cheeses and different nuts and seeds. A variety of ingredients will create some new and tasty flavors and textures. Pesto sauce is a favorite at our house, and I am often whipping the sauce up in the blender for any left overs. Though pasta is a favorite combined with pesto sauce it goes well on vegetables, meats, eggs and different grains such as rice, couscous and quinoa. Try adding pesto to legumes such as white northern beans, pinto beans, black beans and lima beans.

The sauce will keep in the fridge for about a week.

Yields: 1 cup for 6 servings

Ingredients For Walnut and Spinach Pesto Sauce

  • 1 Cup Olive oil
  • 1 Cup Raw Baby spinach
  • 1 Cup Walnuts
  • 1/2 Cup Dry parmesan cheese
  • 1 Tablespoon Seasoned salt
  • 1 Tablespoon Oregano
  • 1 Tablespoon Black pepper
  • 1 Teaspoon lemon juice
  • 2 Garlic cloves

Instructions For Walnut Pesto Sauce

  1. Measure and add 1 cup of olive oil to the blender.
  2. Add 1 cup of thoroughly washed baby spinach to the blender and blend for about 20 seconds.
  3. Add one cup of walnuts and the two garlic cloves and run the blender until the mixture is pureed.
  4. Add all seasonings to the blender.
  5. Add 1 teaspoon of lemon juice.
  6. Measure and add 1/2 cup of dry parmesan cheese. Blend until the mixture is smooth. You can add extra cheese if you desire.

Almond Pesto Sauce

Ingredients:

  • One cup of grape seed oil
  • One cup of almonds
  • One cup of spinach
  • 1/2 cup of dry parmesan cheese
  • 1 tablespoon each of thyme, basil and tarragon
  • 1 teaspoon of garlic salt
  • 1 teaspoon of white pepper

Blend in the blender until completely smooth.

Pumpkin Seed Pesto Sauce

Ingredients:

  • One cup of Canola oil
  • One cup of pumpkin seeds
  • One cup of baby kale
  • One cup of feta cheese
  • One tablespoon each of oregano and basil
  • One tablespoon of garlic salt
  • One teaspoon of cayenne pepper ( add more if you like it really hot

Blend in the blender until completely smooth.

Best Recipe for Left over Pasta with Pesto Sauce

Ingredients:

  • Left over pasta with pesto sauce
  • A small can of salmon
  • Fresh baby spinach
  • Juice of one lemon

I kind of threw this together for lunch the other day. I was able to use the leftovers and also added some healthful ingredients.

Instructions:

  1. Chop a cup of fresh spinach
  2. Drain a can of salmon.
  3. Sprinkle the lemon juice over the salmon and break it up in small pieces.
  4. Mix everything together and you have a delicious and easy dish.

      Pesto is one of my favorite things! I like to cook cubed chicken then toss in some pesto with a little bit of heavy cream and Parmesan cheese then serve over pasta. Quick and easy. I've never made pesto myself, though. Your Hub is all the encouragement I need! :)

      thank you dirt farmer. They are easy to make and expensive to buy. I think a jar at Costco is like 5 or 6 dollars. I have made it with so many different ingredients and it is always good..Love nuts, greens ..cannot go wrong. Thanks for the votes.

      That looks just delicious Carol! I usually prepare my pesto with pine nuts and basil leaves and then the other ingredients you use as well but I am always open to try new recipes.       Hi Carol. I have to tell you that I LOVE pesto. The first time I ever tried it was at a friends home and he showed me how to make it from scratch with olive oil, pine nuts, and a tad of garlic added to the basil leaves he had growing in the window sill. I love it with Angel Hair, drizzled over my tomatoes and of garlic toast. Your recipe looks wonderful. Definitely bookmarking this into my recipes. Thanks for sharing sweety!
