I was born in the south. I live in the south and will die in the south. This is only a small part of the memories I share.

An amazing creation for dessert.

I was enjoying a peanut butter and jelly sandwich commonly known as a PBJ Sandwich, and I never realized that there is something to know about the many uses for peanuts that the highly-intelligent George Washington Carver invented and we use them today.

But me? I have been a traditionalist and that is seen by me eating a plain peanut butter and jelly, but I did not know it was named with the "PBJ." Live and learn.

With some research, I found out a great fact. One that opened my eyes. I found out that now there is a dessert that is named a "Peanut Butter Cake." No joke. The first time that I go to the market, I am going to buy the ingredients in order to bake myself one of these cakes that I have yet to taste.

What a good time is in store.

Peanut Butter Pie

Ingredients:

2 baked pie crusts

½ c. crunchy peanut butter

1 small pkg. Cream cheese

1 large Cool Whip

1 c. confectioners sugar

Mix Ingredients:

by blending crunchy peanut butter ad cream cheese well. Then add confectioners sugar, mix well. Fold into a large container of Cool Whip. Pour into baked pie crust. Makes two pies. I doubt if you come out with a few crumbs because these pies are super-delicious.

My sister makes the most delicious peanut butter pie. We had it last for Thanksgiving. Yum!

I enjoyed watching the 1994 Winter Olympics. I remember Bonnie Blair, the U.S. gold medalist in speed skating, swore by the peanut-butter-and-jelly sandwich (your PBJ) for energy to accomplish the win. When I heard her endorsement of the PBJ, I thought, "If it's good enough for Bonnie Blair, it's good enough for me!"

This recipe sounds unique. I would never have thought of mixing peanut butter with the cream cheese and Cool Whip. I do, however, like to make myself peanut butter treats with a tablespoon of peanut butter, another tablespoon of cocoa powder, a half tablespoon of raw honey, 1/4 tsp of pure vanilla extract, and a sprizzle of cold water to help the mixing process. I usually make this in a regularly sized cup. Then I lick my spoon like a kid licking his mother's beaters after making a chocolate frosting. It works for me as a quick pick-me-up treat.

I could delve into my habit while growing up of lining my left arm with 3 open-faced, peanut-butter-and-honey sandwiches and one in my right hand as I went out the door to play, but, perhaps, that story is for another time.

      Blessings!
