Bundt Cakes -Easy Recipe -Lemon - Pecan
Pecan Bundt Cake
This morning was rainy and cold, so I decided to bake my husband his favorite pecan cake. This is so simple to make and always turns out perfect.
- 1 box butter pecan cake mix
- ¾ cup vegetable oil
- 1 can coconut pecan frosting mix
- 1 cup water
- 4 eggs
- 1 cup pecan pieces
Spray Bundt pan with nonstick cooking spray. Combine all ingredients in large bowl, including frosting mix and mix well.
Bake at 350 degrees for 50 minutes. It will be brown and you can use a toothpick to double check.
You can make a glaze with confectioner sugar and a little milk but the pecan cake is so moist it doesn't really need a glaze.
The recipe works well with lemon cake mix and lemon frosting as well, without the pecans of course. Use about 7/8 cup of water rather than a full cup, as the lemon frosting in thinner than the coconut pecan frosting. It is also good with strawberry and chocolate, following the same recipe as the lemon. I do make a glaze with confectioner sugar and lemon juice to enhance the lemon flavor. See picture below.
I don't think baking a cake can get simpler than this recipe. It stays moist longer than your average cake also. Enjoy!

Blueberry Pound Cake
Blueberry Pound Cake
- 1 (18.25-ounce) package yellow cake mix
- 1 (8-ounce) package reduced-fat cream cheese
- 2 large eggs
- 1 1/3 cups water
- 1 1/2 teaspoons vanilla extract
- 2 cups blueberries
- 1/2 cup chopped pecans
- Preheat oven to 350° F.
- In large mixing bowl, mix cake mix, cream cheese, eggs, water, and vanilla.
- Fold in blueberries and pecans.
- Pour batter into a non-stick10-inch bundt pan coated with nonstick cooking spray and dusted with flour.
Bake for 40 minutes, or until lightly browned. Do not overcook.
Cool in pan for 20 minutes.
Invert onto serving dish, and sprinkle with confectioners' sugar, if desired.
Makes 20 servings.
Simple and Pretty Apple Cake Recipe
Apple Cake -Moist and Delicious
- 1 cup chopped pecans
- 3 cups all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 cups of sugar
- 1 tsp vanilla extract
- 3 eggs
- 1 1/2 cups canola oil
- 3 cups chopped apples (red delicious)
- Mix dry ingredients.
- Mix oil, eggs, sugar and vanilla thoroughly.
- Add dry ingredients 1 cup at a time to wet ingredients.
- Add apples and nuts.
- Pour in a tube pan.
Bake at 325° F. for 1 hour 20 minutes.
- 1 stick butter
- 1 cup brown sugar.
- 1/4 cup evaporated milk
Heat together on high; bring to a boil. Then simmer for 2 minutes. Pour over cake while hot.
These are all delicious recipes and so easy to make. You will enjoy any one of these cakes I believe just as much as my family does.
