This pasta recipe is super easy and fast to make. Perfect for families or individuals alike, this pasta dish will be a great addition to any dinner menu. With the blend of textures, flavors, and colors this pasta dish is not only pleasing to the eye, but also to the taste buds. No one will be able to resist the temptations of this delicious pasta dish.

For busy families who do not have the time to cook or don't have the skill to make fancy dinners, this pasta dish is ready in just about 30 minutes and looks like you spent hours making it. Your family will appreciate the meal and you can enjoy more time with your family knowing that you spent little time creating a great meal for the family to enjoy.

Healthy does not have to be just for adults, with this pasta it is easy to disguise healthy spinach and still keep its nutritional value. This dish is the perfect opportunity to sneak spinach into your child's diet, or for adding color and flavor to your meals. With the addition of cottage cheese you get a nice texture added to your pasta with a light flavor.

Yields: Serves 5 to 6 people

Ingredients:

  • 1 Box Penne Rigate, (or your favorite boxed pasta)
  • 1 cup Spinach
  • 1 cup Cottage Cheese
  • Dash of Salt, Oregano, and Garlic
  • 1 Jar of Three Cheese Pasta Sauce

Instructions:

  1. Bring water and salt to a rapid boil (The addition of salt not only adds flavor but it keeps your pasta from getting too sticky).
  2. Add noodles and boil 5-10 minutes, stirring occasionally. Remove from heat and drain well (If using frozen spinach, use a second pot to boil or wait until noodles are done).
  3. If using fresh spinach chop them now, while the noodles are cooking.
  4. Add noodles back to the pot and add cottage cheese, spinach, and spices.
  5. Stir together and serve.

This pasta pairs great with garlic toast. A quick and easy way to make garlic toast and keep the kids involved in cooking, is to buy a form of butter split top bread and put it in the toaster. When it pops up spread it with butter and a little garlic salt and you are good to go. Making garlic toast this way saves you on time, but it also allows the kids to help with preparing dinner, without the risk of injury.

For a variation on this pasta you can change the penne rigate to your favorite pasta shape or change the sauce. I prefer three cheese because I like the way the flavor of the sauce blends with the flavors of the spinach and cottage cheese. Other good sauces would be tomato, basil, and garlic; fresh mushroom; or flavored with meat.

On days that I have chicken breasts available, I like to add seasoned grilled chicken breasts. The chicken keeps the healthy aspect of this dish going. However, if I'm feeling the need to spice things up I will use my easy Italian meatball recipe instead.
