Penne with peas and rocket
Made in 10 minutes, this simple pasta could be served hot for a family supper and any leftovers could be eaten cold for next day's lunch. The pasta provides energy, the cheese gives calcium and protein, the peas (even if they are frozen) are a good source of vitamin C and rocket gives a wonderful peppery flavour to the whole dish. (Serves 2)
Penne, fresh or dried: 200g
Peas, fresh or frozen: 100g
Extra-virgin olive oil: 1 tablespoon
Rocket leaves: 1 handful, roughly torn
Freshly grated parmesan cheese: 2 tabelspoons
Cook the pasta according to the packet instructions / Cook the peas / Allow both to cool, then mix together / Stir in the oil, then the rocket and finally the cheese / Pack in small containers.
Before you add the rocket and cheese, put the pasta and peas into a blender and pulse with a little of the pasta water to produce a smooth paste.
