Pickled Green Tomatoes Recipe

Pickled To Perfection!

Okay, who doesn't just love green tomatoes? Whether they're fried, salsa, relish, fritters, baked, cake...Yup, that's right... green tomato cake (yummy). Has anyone heard of it? I think you get the message. LOL. See? I told you I love green tomatoes! :) So now I'm going to share a great recipe of pickled tomatoes. These are great any time of the year, especially when you've got garden tomatoes that haven't turned red, or it's the end of the season Enjoy this recipe... and happy pickling folks!!


1 peck of green tomatoes
1 qt. onions
1 c. salt
5 c. brown sugar
4 c. white sugar
1 qt. vinegar
1/2 qt. water
1 tbsp. pickling spices
1/2 tsp. ground cinnamon
1 tbsp. celery seed
1/2 tsp. allspice
1 tbsp. mustard seed Tie all of the spices loosely in a cloth bag. Slice the tomatoes and onions, place them in a large pan, alternating layers. Sprinkle with salt and set overnight. Drain. Add all other ingredients and cook slowly (with spice bag) until tomatoes and onions are done. Discard spice bag. Then seal pickles in sterilized jars.
