The fresher the vegetables you use in this dish, the better. This is an excellent use of tomatoes, onions, and cilantro straight out of the garden.

Pico de Grande Ingredients

  • 1 can Black Beans, Drained and Rinsed
  • 2 medium Tomatoes
  • 1/2 small Red or Sweet Onion
  • 2 Tomatillos
  • 1 Avacado
  • 1 Lime, Juice and Zest
  • 1/2 Cup Cilantro, Fresh!
  • 1 tsp Adobo Seasoning with Cumin
  • 1 tsp Kosher Salt, optional

Pico de Grande in Four Easy Steps

  1. Dice tomatoes, onion, tomatillos, and avacodo and place in mixing bowl.
  2. Add black beans to the bowl.
  3. Add lime zest and juice to the bowl.
  4. Add salt and Adobo Seasoning and mix well.

Serving Suggestions

I often send this with my boys in their lunch bags along with a baggie of chips. It makes a nice change for cold lunches and is one of their favorites, They especially like blue corn and seasame seed tortilla chips, but any tortilla chip will do. We have also used it in wraps along with leftover cumin rubbed roasted chicken. fresh spinach, and monterray jack cheese.

      Thank you Susan! I hope you enjoy it. I love Pico de Gallo, but needed something a little mor substantial for lunches. I'm constantly trying to liven up our lunches.
